Fried creamy cassava

Ingredients:

  • 1 tablespoon butter
  • Salt to taste
  • Fry oil

Preparation method:

  1. Place the cassava in a pressure cooker, cover with water and cook for 25 minutes, over medium heat, after bringing to pressure.
  2. Turn off, let the pressure release naturally and open the pan.
  3. Remove the cassava filaments and mash them while still hot with a fork in a bowl and add the butter and salt.
  4. Spread into a greased medium rectangular pan, flatten with a spoon and place in the freezer for 40 minutes.
  5. Remove from the freezer and, using a knife, cut it into squares.
  6. Place in the freezer for another 2 hours.
  7. Remove the cassava squares and fry them in boiling oil until golden.
  8. Drain on absorbent paper and serve.
