A low carb mug cake, without sugar, flour and milk, to be prepared in a few minutes, in the microwave and consumed without guilt




A low carbohydrate cup cake, without wheat, without milk or sugar, delicious and very easy: it can be prepared in a few minutes in the microwave.

Recipe for 2 people.

LOW CARB MUG CAKE (WITH COCOA) Ingredients:

– 2 units of beaten eggs

– 1 1/4 tablespoons ghee (or unflavored coconut oil)

– 2 tablespoons of cocoa powder THE

– 1 and 1/2 tablespoons of xylitol (or other product of your choice)

– 1 teaspoon(s) of chemical yeast THE

Whipped cream ingredients

– 50 ml of fresh cream

– 1/2 tablespoon(s) of xylitol (or other product of your choice)

– vanilla essence to taste (or almond essence)

Ingredients for decorating

– cashew sherry to taste

PREPARATION:

1. Separate the recipe ingredients and utensils. This recipe can be made in cups or mugs (1 per person), prefer the transparent and large ones.

2. Remove the butter from the refrigerator, place it in a bowl and place it in the microwave for about 15 seconds, just enough to soften it without melting.

3. Sift the cocoa and xylitol or sweetener into a bowl.

PREPARATION:

LOW CARBON MUG CAKE (WITH COCOA):

1. In a bowl, with a mixer or electric mixer, beat the eggs for 2 minutes.

2. Add the softened butter, beat a little more to incorporate it into the eggs.

3. Then add the sifted cocoa powder and xylitol (or other sweetener).

4. Beat all the ingredients well until you obtain a smooth and homogeneous mixture.

5. Finally add the yeast. Whisk just enough to mix.

6. Divide the dough into mixing bowls (or cups), filling them a little more than half as the dough rises and may spill if it is too full.

7. Place the cups in the microwave for 3 minutes on high power.

Low Carb Whipped Cream:

1. In another bowl, with a mixer, beat the cream with the vanilla or almond essence.

2. When the cream has a medium consistency, add the xylitol or sweetener and beat until you obtain whipped cream (be careful not to beat too much, if it goes too much the cream will turn into butter).

3. Set aside.

LOW CARBON MUG CAKE (WITH COCOA):

1. Check the ravioli in the microwave.

2. Insert a toothpick, if it comes out dry, remove it.

3. If not, increase another 1 minute and repeat the toothpick test.

4. Increase the time, every minute, if necessary, until the toothpick comes out clean.

FINALIZATION AND ASSEMBLY:

1. Serve the LOW CARB MUG CAKE (WITH COCOA) on the cups themselves.

2. Place the whipped cream on top of each one (if you want you can use a piping bag), but do not completely cover the surface of the cupcakes.

3. Decorate with cashew sherry.
