Cod fritters recipe

Ingredients:
- 2 1/2 cups milk
- 2 eggs
- 3 tablespoons of oil
- 1 cup (tea) wheat flour
- 1 tablespoon corn starch
- 1/2 teaspoon salt
Filling
- 3 tablespoons of oil
- 1 onion chopped
- 3 cups desalted and cooked flaked cod
- 2 chopped tomatoes
- 1/2 cup chopped green olives
- Salt and black pepper to taste
Roof
- 1 jar of ready-made tomato sauce
- 100 g of grated parmesan
- Parsley leaves to decorate
Preparation method:
- For the filling, heat a pan with oil and fry the onion until soft.
- Add the cod and fry for 3 minutes.
- Add the tomato, olives, season with salt and pepper, mix and turn off.
- For the dough, put the milk, eggs, oil, flour, corn starch, salt in the blender and blend for 2 minutes.
- Spread a medium ladle of batter into a medium non-stick pan greased with oil and fry until golden brown on both sides.
- Place a portion of the filling in each pancake and roll it up like a roll.
- Arrange one pancake next to the other in a medium baking dish, cover with the sauce, sprinkle with parmesan and place in a high, preheated oven for 5 minutes.
- Remove and decorate with parsley to serve.
