Cod pancake: different recipe to vary the menu

The cod fritter is a different, relaxed and truly delicious way to enjoy fish on the Easter menu. In addition to being easy to prepare, the recipe provides eight servings and is perfect for sharing with the family, large or small.




In this step, the pancake appears with a light and very soft dough. The succulent filling, in turn, presents a combination of flavors reminiscent of traditional Portuguese recipes.

Cod fritters recipe

Time: 1 hour

Ingredients:

  • 2 1/2 cups milk
  • 2 eggs
  • 3 tablespoons of oil
  • 1 cup (tea) wheat flour
  • 1 tablespoon corn starch
  • 1/2 teaspoon salt

Filling

  • 3 tablespoons of oil
  • 1 onion chopped
  • 3 cups desalted and cooked flaked cod
  • 2 chopped tomatoes
  • 1/2 cup chopped green olives
  • Salt and black pepper to taste

Roof

  • 1 jar of ready-made tomato sauce
  • 100 g of grated parmesan
  • Parsley leaves to decorate

Preparation method:

  1. For the filling, heat a pan with oil and fry the onion until soft.
  2. Add the cod and fry for 3 minutes.
  3. Add the tomato, olives, season with salt and pepper, mix and turn off.
  4. For the dough, put the milk, eggs, oil, flour, corn starch, salt in the blender and blend for 2 minutes.
  5. Spread a medium ladle of batter into a medium non-stick pan greased with oil and fry until golden brown on both sides.
  6. Place a portion of the filling in each pancake and roll it up like a roll.
  7. Arrange one pancake next to the other in a medium baking dish, cover with the sauce, sprinkle with parmesan and place in a high, preheated oven for 5 minutes.
  8. Remove and decorate with parsley to serve.
