Traditional ingredients of bem-casado
- 7 eggs (egg whites separated from yolks)
- 7 tablespoons of sugar
- 1 teaspoon of vanilla essence
- 7 tablespoons of wheat flour
- 1 teaspoon of baking powder
- margarine to grease
- sugar for sprinkling
Filling:
- 2 cans of condensed milk
Method of preparation
For the filling, cook the condensed milk under pressure, one at a time, for 30 minutes. Remove from pressure and allow to cool completely before opening. In the mixer, whisk the egg whites until stiff, add the egg yolks, sugar and vanilla one at a time, beating until the mixture is light and fluffy. Remove from the mixer and lightly incorporate the sifted flour and baking powder. Pour into a medium rectangular pan lined with greased parchment paper. Bake in a preheated oven for 15 minutes or until lightly browned.
Remove from the oven, allow to cool, cut into circles with a pastry cutter, allow to cool and fill with boiled condensed milk, combining two pieces of dough like filled biscuits. Sprinkle with sugar and wrap with cellophane paper. Keep refrigerated until ready to serve.
