Gourmet caramel and chocolate popcorn
ingredients
- 1/2 cup popcorn
- 3 tablespoons coconut oil
- 1/2 cup brown sugar
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/2 cup chopped dark chocolate
Preparation method
In a large skillet with a lid, heat the coconut oil over medium-high heat. Add the popcorn and cover the pan. Shake the pan well while the corn pops to make sure it doesn’t burn. Once the popping subsides, remove the pan from the heat and transfer the popcorn to a large bowl. In a small saucepan, combine the brown sugar, honey or maple syrup, vanilla extract, and sea salt. Cook over medium heat until the mixture begins to boil and thickens slightly, about 3 to 4 minutes. Pour the caramel mixture over the popcorn and mix well to coat evenly. Spread the popcorn on a baking tray lined with baking paper and place in a preheated oven at 150°C for around 15-20 minutes, stirring occasionally, until the caramel has solidified. Remove the popcorn from the oven and let it cool completely. Melt the dark chocolate in a bain-marie or in the microwave and pour it over the popcorn. Allow the chocolate to harden and then break the popcorn into smaller pieces. Serve and enjoy your gourmet caramel and chocolate popcorn.
