Avocado petit gateau, wheat and dairy free: easy to prepare and healthy, with fewer calories
A healthy recipe (avocado), dairy/lactose free and very quick for the classic petit gateau

PETIT GATEAU WITH AVOCADO Ingredients:
– 125 g of vegan/gluten-free dark chocolate – in pieces or calletti (or sugar-free and gluten-free vegan chocolate)
– 3 units of avocado (if you consider only the pulp, it is 140 g for every 2 portions)
– 1 tablespoon(s) coconut butter (or coconut oil)
– 1 teaspoon(s) vanilla essence, or as much as you like (optional)
– 4 eggs, whole
– 1 tablespoon(s) of cocoa powder ab
– 50 g of almond flour (or cashew flour)
– 4 tablespoons coconut sugar (or xylitol)
Ingredients TO BIG AND SPRAY:
– coconut oil to taste
– cocoa powder to taste ab
Ingredients TO ACCOMPANY (OPTIONAL):
– vegan ice cream of your choice (or other ice cream of your choice)
THE
PREPARATION:
- This recipe yields 6 small cupcakes in cupcake molds, 5cm in diameter, 4cm high for each 2 portions. For molds with a diameter of 7 cm and a height of 6 cm, the yield is 3 units.
- Separate the ingredients and utensils for the recipe.
- Grease individual cupcake molds, rigid or silicone, with coconut oil. Sprinkle cocoa powder into rigid molds and remove any excess.
- Cut the chocolate into small pieces, if you bought it in bars, and melt in a non-metallic bowl in the microwave on medium power for 2 minutes or enough to melt completely. Check that the chocolate has melted completely. Mix well so that it becomes a very smooth mixture.
- Process the almonds (sliced) or cashews until they form a fine flour, if you don’t have flour ready. Remove from processor and set aside.
- Peel the avocado, remove the stone and set the pulp aside (check the ingredients for the amount of pulp needed, weigh it if possible).
PREPARATION:
Avocado Petit Gateau – preparation of the dough:
- Place the melted chocolate with the avocado pulp, eggs, vanilla essence (optional) and coconut oil or coconut butter into the food processor.
- Beat to mix everything very well.
- Add the cocoa powder, coconut sugar or xylitol and almond or cashew flour and mix again.
- Divide the dough into the greased molds, filling the entire height.
- At this point, if you wish, you can put it in the refrigerator to cook it within 48 hours or freeze it.
Avocado Petit Gateau – bake (do this step before serving).
- Preheat the oven to 220ºC.
- The estimated time to cook gnocchi varies in each oven. Tip: Bake just one cupcake first to test your oven and check the time accurately and adjust for subsequent ones.
- Place the molds on a baking tray and place them in a preheated oven at 220°C.
- Cook the avocado petit gateau for approximately 4-5 minutes for cupcakes prepared in the smaller 5cm pans and 7 minutes for the larger 7cm pans.
- If your ravioli were frozen the time will increase: monitor and carry out the test suggested in point 1.
- The gnocchi should be cooked on the outside, but very soft on the inside. One clue is that the cupcake firms up at the sides and you see a soft ring in the center.
Small avocado cake:
- Remove from the oven and let rest for 2 minutes before turning out and serving.
- Carefully loosen the cupcakes from the molds by running a thin knife along the sides or remove the silicone mould(s).
FINALIZATION AND ASSEMBLY:
- This dessert should be served individually assembled.
- Turn the small avocado cake on the dishes on which they will be served.
- Make a scoop of vegan ice cream and serve it with the cupcakes.
