Sardine sauce that serves as an appetizer, with bread and biscuits or to prepare that tasty pasta in a short time
An economical and delicious sauce, made with canned sardines and flavored with lemon zest

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
SARDINIAN SAUCE ingredients
– 2 can(s) of sardines in oil, preserved
– 12 tablespoons of peeled tomatoes, with juice
– 300 ml of boiling water – you can use the pasta cooking water.
– 8 pitted black olives, cut into slices. (or pitted green olives)
– 6 tablespoons of chopped onion.
– 4 clove(s) of garlic, minced.
– 1 unit of finger-de-moça pepper, seedless, chopped.
– 60 ml of olive oil, for frying.
– parsley to taste, chopped
– lemon to taste (zest)
– Salt to taste
PREPARATION:
- Separate the utensils and ingredients for the recipe.
- Put a kettle on the heat with water to boil (see quantities in the ingredients).
- Open the can of sardines, drain the liquid, open the sardines in half and use a fork or tongs to remove the central bone of the fish.
- Peel and chop the onion and garlic.
- Wash the pepper, remove the seeds and chop it.
- Remove the stone from the olives and cut them into thin slices.
- Wash and chop the parsley.
- Wash the lemon, peel it and keep it on a paper towel.
PREPARATION:
Sardine sauce:
- In a deep pan, over medium heat, sauté the onion, garlic and chilli in the olive oil until the onion is translucent.
- Add the peeled tomatoes with the juice and boiling water (see quantities in the ingredients)
- Add salt and brown for 5-7 minutes, stirring occasionally.
- Add the sardines and mix gently to incorporate them: don’t let the sardines break down too much, they should be quite large.
- Sauté for another 2 minutes to incorporate the flavors.
- Finally add the olive slices, chopped parsley and lemon zest and mix.
- Turn off the fire.
FINALIZATION AND ASSEMBLY:
- Serve the sardine sauce on your favorite pasta.
- It can also be used as a snack, spread on croutons or slices of bread.
