Spaghetti carbonara recipe to make at home


On this carbonara day, São Paulo chef Rafael Lorenti teaches you how to prepare this tasty dish made with pasta, eggs, cheese and bacon

Apparently, the famous spaghetti carbonara recipe was born from the meeting between Italians and Americans during the Second World War.




The soldiers coming from the United States, who went to fight in Italy, brought with them supplies that were already part of their basic diet: eggs (in powder, to make transportation possible) and bacon. Italians, for their part, were already in the habit of consuming pasta and cheese.

Somehow the idea of ​​mixing all these ingredients came up and thus the dish was born which has become one of the most traditional in Rome and Lazio in general.

Next, Rafael Lorenti, chef at the Italian restaurant Basilicata, in São Paulo, teaches the more traditional recipe for spaghetti carbonara, which uses pecorino romano, made from sheep’s milk.

However, it is possible to replace the pecorino with parmesan, which is easier to find in supermarkets. Check out step by step below:

ingredients

  • 200 g spaghetti
  • 3 egg yolks
  • 100 g of pecorino
  • 80 g diced pancetta (bacon)
  • Parsley to taste
  • Olive oil to taste

Preparation method

  • Cook the spaghetti according to the time indicated by the manufacturer
  • Drain the pasta and set aside the pasta cooking water.
  • In a pan, add a drizzle of olive oil and lightly brown the diced bacon and set aside.
  • In the same pan, add two tablespoons of the pasta cooking water to cool the pan and set aside.
  • In a bowl mix the egg yolks with the pecorino.
  • Place the pasta in the pan together with the bacon and egg yolks mixed with the pecorino.
  • Add the pasta water little by little and stir over a very low heat until everything becomes a velvety sauce.
