Ingredients:

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 tablespoons butter
  • 1 carrot cut diagonally
  • 1 Italian courgette, cut diagonally
  • 1 tablespoon of oil
  • 4 chicken breast fillets
  • Salt and black pepper to taste
  • 4 tablespoons chopped fresh herbs (thyme, tarragon, parsley, marjoram, oregano)

Preparation method:

  1. In a pan over medium heat, cook the broccoli and cauliflower in boiling water for 5 minutes.
  2. Drain and reserve.
  3. Over medium heat, melt the butter in a large, wide skillet.
  4. Add the carrot, broccoli and cauliflower.
  5. Brown for 5 minutes, stirring occasionally.
  6. Add the courgettes and brown them for 2 minutes.
  7. Turn off and set aside.
  8. Heat a pan with oil over medium heat.
  9. Season the chicken with salt and pepper and grill for 3 minutes on each side.
  10. Remove, transfer to a plate and add the vegetables.
  11. Sprinkle with herbs and serve immediately.
