Lemongrass Brigadeiro: a different flavour, a surprise

Brigadeiro, the traditional Brazilian dessert, in a different version with lemongrass

Recipe for 4 people.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients SANTO CAPIM BRIGADEIRO

– 100 ml of fresh cream

– 6 large lemongrass leaves

– 1 can(s) of condensed milk

– 100 g of white chocolate, chopped or diced

– 1 tablespoon(s) of corn glucose

Ingredients FOR GREATING:

– unsalted butter to taste

Ingredients TO FINISH

– crystalline sugar to taste

PREPARATION:

  1. Separate all ingredients and utensils for the recipe. The yield is 30 sweets of 15g each (weight before adding crystalline sugar) for 4 portions.
  2. Break the chocolate into small pieces or use it in callets.
  3. Arrange the finishing crystalline sugar on a plate.
  4. Grease a plate with butter to cool the brigadeiro dough.

PREPARATION:

Capim Santo Infusion:

  1. Wash the lemongrass very well and dry it.
  2. Place the leaves in a pan, add the fresh cream and cook over low heat for about 5 minutes.
  3. Discard the lemongrass leaves.

Capim Santo Brigadeiro:

  1. In the pan with the infusion, add the other ingredients of the recipe (condensed milk, white chocolate and corn glucose) and mix well.
  2. Continue over low heat, stirring continuously.
  3. Cook until the mixture has thickened and comes away from the bottom of the pan: to be sure of cooking, tilt the pan slightly to the side and see if the mixture comes away from the bottom.
  4. Turn off the heat and transfer it to a baking tray greased with butter, let it cool slightly and cover with cling film to cool completely.

Brigadeiro de Capim Santo – Assembly:

  1. Place the crystalline sugar on a plate.
  2. Wet your palms with water or grease them with a little butter.
  3. Using a (flat) teaspoon as a measure, take a portion of the dough and roll it into a ball: the approximate weight is 15 g each.
  4. Dip the brigadeiro in the crystalline sugar.
  5. Repeat the process until you run out of ingredients.

FINALIZATION AND ASSEMBLY:

  1. Place the capim santo brigadeiro(s) inside the paper molds and arrange them on a serving plate.
  2. Keep refrigerated. Remove some before serving.
