Baked rice with pine nuts
Time: 40 minutes
Performance: 8 servings
Difficulty: easy
Ingredients:
- Margarine for greasing
- Straw potatoes for dusting
Pine nut stew:
- 2 tablespoons butter
- 1 onion chopped
- 1/2 chopped red chilli
- 2 cups cooked, shredded beef
- 2 cups cooked and chopped pine nuts
- 1 can drained green corn
- 1 seedless tomato chopped
- 1/2 cup chopped green chili pepper
- Salt to taste
Roof:
- 3 eggs
- 1 cup cream cheese (tea).
Preparation method:
- For the sauté, over medium heat, heat a pan with the butter.
- Sauté onion, bell pepper, meat, pine nuts, corn, tomato, green chilies and salt for 3 minutes.
- Unplug and set aside.
- In the meantime, in a greased baking dish, make a layer with half the rice, one with the sauce and another with the rest of the rice.
- For the garnish, mix the eggs and cream cheese and then pour over the rice.
- Bake in a preheated medium oven for 20 minutes or until lightly browned.
- Sprinkle with potato straws and serve immediately.
