Baked rice with pine nuts

Time: 40 minutes

Performance: 8 servings

Difficulty: easy

Ingredients:

  • Margarine for greasing
  • Straw potatoes for dusting

Pine nut stew:

  • 2 tablespoons butter
  • 1 onion chopped
  • 1/2 chopped red chilli
  • 2 cups cooked, shredded beef
  • 2 cups cooked and chopped pine nuts
  • 1 can drained green corn
  • 1 seedless tomato chopped
  • 1/2 cup chopped green chili pepper
  • Salt to taste

Roof:

  • 3 eggs
  • 1 cup cream cheese (tea).

Preparation method:

  1. For the sauté, over medium heat, heat a pan with the butter.
  2. Sauté onion, bell pepper, meat, pine nuts, corn, tomato, green chilies and salt for 3 minutes.
  3. Unplug and set aside.
  4. In the meantime, in a greased baking dish, make a layer with half the rice, one with the sauce and another with the rest of the rice.
  5. For the garnish, mix the eggs and cream cheese and then pour over the rice.
  6. Bake in a preheated medium oven for 20 minutes or until lightly browned.
  7. Sprinkle with potato straws and serve immediately.
