Eggplant lasagna

ingredients

  • two eggplant large slices
  • 300 g of minced meat
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 300 g tomato sauce
  • 200 g of sliced ​​mozzarella
  • Olive oil, salt and ground black pepper to taste

Preparation method

In a pan, heat the olive oil over medium heat and fry the eggplant slices until golden brown. Reserve. Then, in the same pan, brown the onion and garlic. Add the minced meat and cook until it loses its reddish color. Add the tomato sauce and season with salt and black pepper. Assemble the lasagna by alternating layers of aubergines and minced meat. Finish with a layer of mozzarella and bake in a preheated oven at 180°C for 20 minutes.

  • 2 cups cooked rice
  • 1 cup cooked, shredded chicken breast
  • 1/2 cup green corn tea
  • 1/2 cup pea tea
  • 1 grated carrot
  • 1/2 cup chopped olives
  • 200 g of grated mozzarella
  • 200 g of ricotta
  • Salt and ground black pepper to taste
  • 2 beaten eggs
  • 1/2 cup milk
  • 1/2 cup grated parmesan for sprinkling
  • Greasing oil

Preparation method

In a large bowl, mix the rice, chicken, corn, peas, carrots, olives and mozzarella. Season with salt and pepper. Add the beaten eggs, milk and cream cheese. Mix well. Then transfer to a refractory pan greased with olive oil. Sprinkle with parmesan and bake in a preheated oven at 200°C for about 20 minutes or until golden brown.

  • 1 courgette cut into cubes
  • 1 aubergine cut into cubes
  • 1 red pepper cut into pieces
  • 1 yellow pepper cut into pieces
  • 1 onion cut into pieces
  • Salt, ground black pepper and aromatic herbs to taste
  • Olive oil for seasoning
  • 200 g of natural yogurt
  • 1 crushed garlic clove
  • Juice of 1/2 lemon

Preparation method

Arrange the vegetables alternately on wooden skewers. Season with salt, black pepper, herbs and olive oil. Grill in a pan over medium heat until cooked through. For the sauce, mix the Yogurt, garlic, lemon juice, salt and black pepper in a container. Serve the skewers accompanied by the yogurt sauce.

  • Juice of 3 oranges
  • 1 tablespoon honey
  • 1 tablespoon mustard
  • 1 clove of minced garlic
  • 2 tablespoons of olive oil

Preparation method

Season the chicken with salt and black pepper in a container. In a pan, heat the olive oil over medium heat and brown the chicken breasts. Then, mix the orange juice, honey, mustard and garlic in a bowl. Pour this mixture over the chicken and cook over low heat with the pan covered for about 20 minutes. Serve the chicken topped with the sauce.

Tip: Serve with rice.

Baked fish with potatoes

ingredients

  • 4 fillets of Tilapia
  • 4 potatoes cut into slices
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • Olive oil, salt, ground black pepper and rosemary to taste

Preparation method

In a container, season the fish fillets with lemon juice, garlic, salt and black pepper. On a baking tray, form a bed with the potato slices. Arrange the fish fillets on top and drizzle with olive oil. Sprinkle with lemon zest and rosemary. Cook in a preheated oven at 200°C for 30 minutes or until the potatoes are cooked and the fish is golden.
