Nutritionist teaches how to make barbecue more nutritious with chimichurri salad dressing, arugula vinaigrette and grilled mushrooms

With this in mind, Oba Hortifruti nutritionist, Renata Guirau, taught three healthy and delicious recipes to serve alongside your barbecue: chimichurri salad dressing, arugula vinaigrette, and grilled mushrooms, the last of which is a great option for vegetarians or vegans as a meat substitute. BBQ side dish recipes

Grilled mushrooms


  • 5 portobelo mushrooms
  • 1 crushed garlic clove
  • 2 tablespoons of olive oil
  • Salt and black pepper to taste

Preparation method

Make a paste with olive oil, salt, pepper and crushed garlic. Season the mushrooms. Leave them with the stem facing upwards and place them on the barbecue until they are golden. Serve with seasoned rice and sliced ​​meats.

Homemade Chimichurri Salad Dressing


  • 10 g of dehydrated parsley
  • 10 g of dehydrated garlic and onion
  • 5 g of dried chili pepper
  • 200 ml of olive oil
  • 100 ml of white wine vinegar
  • 5 g of dehydrated chives
  • 5 g of bay powder
  • 5 g of dried oregano

Preparation method

Mix everything together and leave to rest overnight in the fridge before serving.

Arugula vinaigrette


  • 1 cup diced onion
  • 1 cup diced tomato
  • 1/2 cup arugula leaves, cut in half
  • 2 tablespoons chopped fresh green chili pepper
  • 2 tablespoons of olive oil
  • 50 ml of lemon juice
  • 50 ml of water
  • 1 teaspoon of salt

Preparation method

Ideally, this recipe should be prepared at least an hour before serving and refrigerated. Gently mix all the ingredients. Serve with leaf salad, roast sausage, bread or toast.
