Spinach pie with ricotta

ingredients

  • 1 cup olive oil
  • 1 onion peeled and chopped
  • 1 cup of tea spinach leaves
  • 1/2 red onion sliced
  • 2 eggs
  • 1 1/2 cups cottage cheese
  • 2 teaspoons wholemeal flour
  • Salt, nutmeg, ground white pepper and sweet paprika to taste
  • Greasing oil
  • Wholemeal flour for dusting

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add the spinach and onion and sauté for 5 minutes. Reserve. Place the eggs, ricotta and wheat flour in a container and mix until you obtain a smooth consistency. Add the spinach and mix until combined. Turn off the heat and season with salt, black pepper, nutmeg and sweet paprika. Grease a baking tray with olive oil and flour it with wheat flour, pour the mixture over it and bake in a preheated oven at 180°C for 35 minutes. Serve immediately.

Whole meat pie

ingredients

Pasta

  • 1 cup whole wheat flour
  • 1/5 cup rolled oats
  • 1 1/2 cups skim milk
  • 1/2 cup olive oil
  • 3 eggs
  • 1 tablespoon of chemical yeast
  • Salt and ground black pepper to taste
  • Greasing oil
  • Oatmeal for flouring

Filling

  • 1kg of minced meat
  • 1 onion peeled and chopped
  • 1 clove of garlic, peeled and crushed
  • 395 g of green corn
  • 2 seeded and chopped tomatoes
  • 2 cups ricotta cream
  • Salt and olive oil to taste

Preparation method

Pasta

Place all the ingredients, except the chemical yeast, in a blender and blend until you obtain a homogeneous mass. Add the yeast and beat again to incorporate. Next, place half the dough on a baking tray greased with olive oil and floured with oat flour. Reserve.

Filling

In a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the minced meat and brown for 10 minutes. Add the tomatoes and green corn and cook for 3 minutes. Season with salt and complete with the ricotta cream. Mix well. Turn off the heat, pour the filling over the dough and cover with the rest of the dough. Bake in a preheated oven at medium temperature until golden brown. Serve immediately.

Soy cake with vegetables

Pasta

  • 8 tablespoons of soy cooked and drained
  • 2 cups whole milk
  • 1 teaspoon olive oil
  • 4 tablespoons wholemeal flour
  • 6 tablespoons of ricotta
  • 6 eggs
  • Greasing oil
  • Wholemeal flour for dusting

Filling

  • 5 teacups of water
  • 1 carrot peeled and chopped
  • 1 cooked broccoli florets
  • 1 tomato seeded and cut into pieces
  • 1 onion peeled and chopped
  • Salt, olive oil and chopped parsley to taste

Preparation method

Pasta

Place all the dough ingredients in the mixer and blend until you obtain a smooth consistency. Pour half the dough onto a baking tray greased with olive oil and floured with wheat flour. Reserve.

Filling

In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Adhere to carrot, broccoli florets and cherry tomatoes, sauté for 3 minutes. Then pour the filling onto the form with the dough and cover with the rest of the dough. Bake in a preheated oven at medium temperature until golden brown. Serve immediately.



Chicken pot pie with oats

Pasta

  • 4 eggs
  • 3 tablespoons of oat flour
  • 1 teaspoon of chemical yeast
  • Salt to taste
  • Greasing oil
  • Oatmeal for flouring

Filling

  • 3 tablespoons of olive oil
  • 1 onion peeled and chopped
  • 1 tomato seeded and cut into pieces
  • 395 g of green corn
  • 300 g of chicken breast cooked and cut into pieces
  • 3 tablespoons of tomato sauce
  • 3 tablespoons of ricotta
  • Salt, parsley and chopped chives to taste

Preparation method

Pasta

Place the eggs and salt in a blender and blend for 4 minutes. Add the oatmeal and beat for another 2 minutes. Add the baking powder and beat again to incorporate it. Reserve.

Filling

In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add the tomato, corn and chicken and sauté for 6 minutes. Finally add the tomato sauce, ricotta, parsley and chives and mix well. Turn off the heat, add salt and set aside.

Assembly

Grease a baking tray with olive oil and flour with wheat flour. Pour half the dough over it and cover with the filling. Finish with the rest of the dough and bake in a preheated oven at 180°C until golden. Serve immediately.

Quinoa cake with endive

ingredients

  • 4 eggs
  • 2 teacups of water
  • 1 clove of garlic, peeled and crushed
  • 1 onion peeled and chopped
  • 1 cup of tea Quinoa
  • 1/2 bunch of escarole, washed and cut into strips
  • Salt, olive oil, ground black pepper and oregano to taste
  • Greasing oil
  • Wheat flour for dusting

Preparation method

Place the quinoa in a pan, cover with water, salt and cook over medium heat until the water dries up. Turn off the heat and set aside. In another pan, add the olive oil and heat over medium heat. Add the onion and garlic and brown them. Add the endive leaves and brown them until wilted. Turn off the heat, wait for it to cool and drain the excess water from the escarole. Reserve.

Place the eggs, salt, black pepper and oregano in a blender and blend until smooth. Transfer to a container, add the quinoa and the reserved endive and mix well. Then arrange on a baking tray greased with olive oil and floured with wheat flour. Place in a preheated oven at 200ºC for 25 minutes. Serve immediately.

Tuna pie with quinoa

  • 4 eggs
  • 3 tablespoons quinoa flour
  • 1 teaspoon of chemical yeast
  • Salt to taste
  • Greasing oil
  • Quinoa flour for dusting

Filling

  • 340 g of tuna natural drained solid
  • 1 onion chopped
  • 1 red chilli chopped
  • 1 cup cooked quinoa
  • Salt and black pepper to taste

Place the eggs and salt in a blender and blend for 4 minutes. Add the quinoa flour and beat for another 2 minutes. Add the baking powder and beat again to incorporate it. Reserve.

Filling

In a pan, heat the olive oil over medium heat and sauté the onion and chilli until soft. Add the tuna and quinoa and sauté for another 3 minutes. Season with salt and pepper. Reserve.

Assembly

Grease a baking tray with olive oil and flour with quinoa flour. Pour half the mixture onto the baking tray. Spread the tuna and quinoa filling over the dough. Cover with the remaining dough. Bake in a preheated oven at 180°C for approximately 25-30 minutes, or until golden brown. Serve immediately.

Chicken and sweet potato pie

ingredients

Pasta

  • 4 eggs
  • 3 tablespoons of oat flour
  • 1 teaspoon of chemical yeast
  • Salt to taste
  • Greasing oil
  • Oatmeal for flouring

Filling

  • 500 g of chicken breast cooked and cut into pieces
  • two sweet potatoes cooked and mashed
  • 1 onion chopped
  • 3 eggs
  • 1/4 cup cottage cheese
  • Salt and ground black pepper to taste

Preparation method

Pasta

Place the eggs and salt in a blender and blend for 4 minutes. Add the oatmeal and beat for another 2 minutes. Add the baking powder and beat again to incorporate it. Reserve.

Filling

In a large bowl, combine shredded chicken, sweet potato, onion and ricotta. Season with salt and pepper. Reserve.

Assembly

Grease a baking tray with olive oil and flour with oat flour. Pour half the mixture onto the baking tray. Spread the chicken and sweet potato filling over the dough. Cover with the remaining dough. Bake in a preheated oven at 180°C for approximately 30-35 minutes, or until golden and set. Remove from the oven and let it cool slightly. Serve immediately.
