Preparation method
In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add the spinach and onion and sauté for 5 minutes. Reserve. Place the eggs, ricotta and wheat flour in a container and mix until you obtain a smooth consistency. Add the spinach and mix until combined. Turn off the heat and season with salt, black pepper, nutmeg and sweet paprika. Grease a baking tray with olive oil and flour it with wheat flour, pour the mixture over it and bake in a preheated oven at 180°C for 35 minutes. Serve immediately.
Whole meat pie

- 1 cup whole wheat flour
- 1/5 cup rolled oats
- 1 1/2 cups skim milk
- 1/2 cup olive oil
- 3 eggs
- 1 tablespoon of chemical yeast
- Salt and ground black pepper to taste
- Greasing oil
- Oatmeal for flouring
Filling
- 1kg of minced meat
- 1 onion peeled and chopped
- 1 clove of garlic, peeled and crushed
- 395 g of green corn
- 2 seeded and chopped tomatoes
- 2 cups ricotta cream
- Salt and olive oil to taste

Place all the ingredients, except the chemical yeast, in a blender and blend until you obtain a homogeneous mass. Add the yeast and beat again to incorporate. Next, place half the dough on a baking tray greased with olive oil and floured with oat flour. Reserve.
Filling
In a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the minced meat and brown for 10 minutes. Add the tomatoes and green corn and cook for 3 minutes. Season with salt and complete with the ricotta cream. Mix well. Turn off the heat, pour the filling over the dough and cover with the rest of the dough. Bake in a preheated oven at medium temperature until golden brown. Serve immediately.

- 1/2 bunch of escarole, washed and cut into strips
- Salt, olive oil, ground black pepper and oregano to taste

- Wheat flour for dusting
Preparation method
Place the quinoa in a pan, cover with water, salt and cook over medium heat until the water dries up. Turn off the heat and set aside. In another pan, add the olive oil and heat over medium heat.
