  • Carrot: another peeling with incredible benefits! In this case it contains a high amount of beta-carotene, an antioxidant that turns into vitamin A and can fight free radicals.
  • Zuchinis: It contains a lot of fiber and vitamins that help regulate the body
  • Onion: rich in flavonoids, anti-inflammatory and antioxidant substances, it is also possible to ingest onion peel
  • Cucumber: Cucumber peel contains many fibers and minerals, being rich, for example, in silica and magnesium

Necessary care

Since the peel of the vegetable is the part that comes into contact with the environment around it, you need to pay even more attention to hygiene if you intend to eat it.

“These foods must be washed with running water, rubbing your hands on the surface so that any residues of dirt/bacteria disappear. There are already very interesting products on the market used to clean vegetables, fruit and leaves, always thinking about practicality and waste water,” says Vittoria.
