Coconut Butter Cake

Time: 1 hour

Performance: 12 servings

Ingredients:

  • 2 eggs
  • 1 1/2 cups (tea) sugar
  • 4 tablespoons butter
  • 1 glass of coconut milk (200ml)
  • 1/2 cup (tea) potato starch
  • 1 cup (tea) wheat flour
  • 1 level tablespoon of chemical yeast
  • Margarine and wheat flour for greasing

Syrup:

  • 1 glass of coconut milk (200 ml)
  • 1 glass of milk (use empty glass of coconut milk to measure)
  • 50g grated coconut
  • 3 tablespoons of sugar

Preparation method:

  1. In the planetary mixer, beat the eggs with the sugar for 10 minutes or until it doubles in volume.
  2. Add the butter, coconut milk, starch and flour, beating to combine.
  3. Add the yeast and mix with a spoon.
  4. Pour into a greased and floured 25cm x 35cm baking pan and bake in a preheated medium oven for 25 minutes or until an inserted toothpick comes out clean.
  5. Leave to cool and unmold.
  6. For the syrup, mix the coconut milk, milk, coconut and sugar in a saucepan and bring to the boil.
  7. Cook for 3 minutes and turn off.
  8. Pierce the cake with a toothpick and drizzle it with the still hot syrup.
  9. Leave to cool and serve in squares.
