cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients Pea soup (fresh)

– 600 g of fresh peas (or frozen peas)

– 2 units of sweet potatoes (these ingredients are optional) (or potatoes)

– 100 g of bacon (optional)

– 2 tablespoons of chopped onion.

– olive oil to taste (or oil)

– Salt to taste

– pepper to taste (optional) B

Ingredients for finishing and decorating:

– green onion chopped to taste

PREPARATION:

  1. Place a kettle with water (see quantities in the ingredients) on the heat to boil.
  2. Separate the utensils and ingredients for the recipe.
  3. Peel and chop the onion.
  4. Wash and peel the sweet potato or potato (optional) and cut into cubes: these vegetables add extra creaminess to the soup, but are not mandatory.
  5. If using bacon, remove the skin and cut it into cubes.
  6. Wash well and chop the chives last, leaving them aside on absorbent paper.

PREPARATION:

Pea soup (fresh):

  1. Place a pan greased with a drizzle of olive oil over medium heat to heat.
  2. Add the bacon cubes (optional) and fry until golden brown.
  3. Remove the bacon from the pan and set aside on a serving plate lined with paper towels.
  4. If the bacon releases a lot of fat, discard some of it.
  5. Add the chopped onion and sauté until it becomes transparent.
  6. Optional: Add yam or potato cubes, season with a little salt and sauté, stirring for another minute. Add half the boiling water and cook until very soft.
  7. Add the frozen peas and season with salt and pepper (optional).
  8. Add the remaining boiling water, stir and cover the pan.
  9. Cook for about 5 minutes.
  10. Turn off the fire.
  11. If you blend it in a blender, let it cool a little.
  12. Transfer the contents of the pan to the blender or leave it in the pan to use a mixer.
  13. Beat until you obtain a smooth and homogeneous cream – if necessary add a little more water to reach the desired consistency.
  14. Return soup to pan.

FINALIZATION AND ASSEMBLY:

  1. When ready to serve, return the soup to the heat, add the bacon cubes (optional), bring to the boil and check the salt.
  2. Place the pea soup (fresh) in a bowl, or, if you prefer, distribute it in soup plates or bowls.
  3. Finish with chopped green onion.
