Ravioli stuffed with aubergines

ingredients

  • two cut the aubergines into cubes
  • 2 tablespoons of olive oil
  • 1 cup chopped walnuts
  • 1 1/2 teaspoons mashed tofu
  • 1 cup whole wheat flour
  • 1 cup rice flour
  • 2 crushed garlic cloves
  • 2 eggs
  • Salt and ground black pepper to taste
  • 2 tablespoons chopped basil
  • 3 cups homemade tomato sauce
  • Waterfall

Preparation method

Place the wheat and rice flour, eggs and 1 pinch of salt in a container. Mix well until a homogeneous mixture is formed. Then, wrap the dough in cling film and refrigerate for 30 minutes. Next, remove the dough from the refrigerator and set it aside. In a pan, heat the olive oil over medium heat and sauté the garlic. Then add the aubergines and brown them for 5 minutes. Season with salt and pepper. Add the nuts and tofu, mix well and turn off the heat. Place the dough on a smooth surface and roll it out with a rolling pin. Then cut 10cm squares. Place the filling in the center of each square, fold the dough in half and seal the edges well. In a large pan, add water and bring to a boil over medium heat. Add the ravioli and a pinch of salt and cook al dente. In another pan, heat the tomato sauce for 4 minutes. Transfer the ravioli to a colander. After the water has completely drained, place the ravioli on a plate, cover them with the tomato sauce and sprinkle with the basil.

Ricotta gnocchi with spinach

ingredients

  • 460 g of ricotta
  • two egg
  • 1 bunch sautéed and chopped spinach
  • 3/4 cup rice flour
  • 250 g of tomato sauce
  • Salt and ground black pepper to taste
  • Rice flour for dusting

Preparation method

Place all the ingredients, except the tomato sauce, in a container and mix until you obtain a smooth mixture. Cover with cling film and refrigerate for 30 minutes. Then flour a smooth surface with rice flour and roll out the dough on it. Divide into equal parts, form rolls and cut them into cubes. Then arrange the gnocchi on a baking tray and bake in a preheated oven at 200ºC for 25 minutes. Remove from the oven, pour over the tomato sauce and serve immediately.

Chicken mince with vegetables

  • 1 chicken breast without skin and cut into cubes
  • 2 cloves of garlic, peeled and crushed
  • 3 onions peeled and chopped
  • 2 courgettes, peeled and cut into slices
  • 1 carrot peeled and cut into slices
  • 3 bay leaves
  • 1 cup of water
  • 180 g of tomato sauce
  • Salt, ground black pepper and olive oil to taste

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the garlic and onion and brown them. Add the chicken and brown it lightly. Add the tomato sauce, courgettes, carrots, bay leaves and water and cook until the vegetables are soft. Turn off the heat, season with salt and black pepper and serve immediately.

  • 2 tablespoons of olive oil
  • 2 cloves of garlic, peeled and crushed
  • 1 red onion peeled and cut into strips
  • 1 eggplant sow and cut into strips
  • 1 red pepper, seeded and chopped
  • 1 tomato seeded and cut into pieces
  • 5 Dutch pods
  • Salt and ground black pepper to taste

Preparation method

In a pan, add the olive oil and place over medium heat to heat. Add the garlic, onion, aubergines, pepper, tomato and green beans and sauté for 10 minutes. Season with salt and black pepper and turn off the heat. Serve immediately.

Rice cake with chicken and oats

ingredients

  • 1 peeled and cooked potato
  • 1 chicken breast cooked and cut into pieces
  • 1 egg
  • 1 1/2 cups cooked brown rice
  • 3 tablespoons of oat bran
  • Salt, ground black pepper and chopped green chillies to taste
  • Oil for anointing

Preparation method

Place the potato in a container and, using a fork, mash it. Add the rice, chicken, oat bran and egg and mix until smooth. Season with salt, black pepper and green perfume. Then, with a spoon, take some dough and form a ball. Repeat the operation with all the dough and place it on a baking tray greased with olive oil. Place in a preheated oven at 200ºC for 20 minutes. Serve immediately.
