CHIMICHURRI Ingredients
– 40 ml of extra virgin olive oil
– 20 ml of red wine vinegar
– Salt to taste
– 1 clove(s) of garlic, minced
– 1/4 unit of finger-de-moça pepper, seeded, chopped
– 3 teaspoons of thyme, leaves only
– 3 teaspoon(s) of parsley
– 1 teaspoon chilli – or as much as you like THE
– 1 teaspoon(s) of spicy paprika ab
– 3 teaspoon(s) of dried oregano THE
PREPARATION:
- Separate the utensils and ingredients for the recipe.
- If you wish to prepare the recipe for later consumption, sterilize the pot(s) with boiling water for 15 minutes.
- This recipe is simpler if prepared in a mortar. If you don’t have it, chop the ingredients.
- Wash the parsley and thyme well. Dry with absorbent paper.
- Peel and mince the garlic clove (or crush it in a mortar).
- Remove the seeds from the pepper and chop it. Then, if you use the pestle, add it and knead.
PREPARATION:
CHIMICHURRI:
- Heat the vinegar, extra virgin olive oil and salt in a pan for 2 minutes.
- Check the quantity of chilli: if you want it less spicy, reduce it.
- Remove from the heat and add the chopped or crushed spices in a mortar.
- Adjust seasonings: salt and others used in the recipe.
- Mix well. Serve immediately.
- If you wish to store it for later use, drain the sterilized jar(s) well, let it dry naturally, place it in containers, cover and store in the refrigerator.
- If it cools, remove some before serving as the oil may solidify.
FINALIZATION AND ASSEMBLY:
- Serve the chimichurri to accompany your barbecue or even to prepare marinades.
