Ingredients: green corn cake with ricotta and flocão

– 4 small ears of fresh green corn

– 3 egg units, large

– 1 cup(s) of sugar

– 1 glass(s) of coconut milk

– 1/2 cup(s) of oil

– 1 cup(s) flaked cornmeal

– 1 cup(s) dry shredded coconut

– 1 tablespoon(s) of chemical yeast THE

– 1 cup(s) of ricotta (without starch)

Ingredients TO COMPLETE:

-powdered sugar to taste

– ground cinnamon to taste THE

PREPARATION:

  1. Separate the utensils and ingredients for the recipe. The measurements for this cake were taken in the cup of cream cheese.
  2. Preheat the oven to 180°C.
  3. Thresh green corn ears onto a cutting board.
  4. Grease a 20cm round (with or without hole) or square cake tin, for 1 whole recipe – 4 portions.

PREPARATION:

Green corn cake with ricotta and flocão – PREPARATION OF THE DOUGH:

  1. In a blender, beat the shelled corn, eggs, sugar, oil, coconut milk, and cream cheese until smooth.
  2. Add the corn flakes and beat again until well combined.
  3. Add the yeast and grated dry coconut and mix.

Green corn cake with ricotta and flocão – COOKING:

  1. Pour the cake batter into the greased pan.
  2. Bake in a preheated oven at 180°C for about 45 minutes, or until the surface of the cake is golden and compact.
  3. Do the toothpick test and check: if placed in the center it comes out almost dry, it’s ready – don’t overcook, so the cake will be just right – cooked, but with moisture.
  4. Turn off the oven, let it cool a little.
  5. Mix cinnamon and powdered sugar in a small bowl.

FINALIZATION AND ASSEMBLY:

  1. Unmold, sprinkle with sugar and cinnamon and transfer to a serving plate.
  2. Serve the green corn cake with cream cheese and flakes after a cold.
