CORN JUICE Ingredients
– 1 cup(s) of fresh green corn
– 3 cups of milk
– 2 cups of water, filtered and chilled
– 2 and 1/2 tablespoons of sugar (optional)
PREPARATION:
- Separate the utensils and ingredients for the recipe.
- Remove the husks and hairs from the corn and wash the ears well.
- On a cutting board, using a sharp knife, remove the corn kernels from the cobs.
- Measure the amount of corn (as indicated in the ingredients).
PREPARATION:
Corn juice (blend in a blender)
- Place the corn kernels in the blender and add the milk and half the room temperature water.
- Beat a lot, for about 3 to 5 minutes, until the mixture is smooth and homogeneous.
- Place a strainer over a pan, and blend the contents of the blender, squeezing it with a spatula to remove all the juice from the pulp.
Corn juice (cooking):
- Add sugar (optional).
- Bring to a boil over low heat, stirring constantly, and cook over low heat until slightly thickened, about 20 to 30 minutes.
- In addition to the creaminess visible in the pan, taste and check the flavor: it cannot taste like raw corn.
Corn juice (shake and chill):
- Turn off the heat and put the mixture in the blender.
- Whisk again, along with the rest of the water – this time use ice water
- Transfer to a jug, filter again through a fine sieve and store in the refrigerator.
FINALIZATION AND ASSEMBLY:
- Serve the Corn juice refrigerated, store in the refrigerator and consume on the same day as preparation.
