Ingredients:

  • 2 cups soaked lentils
  • 3 cups (tea) of water
  • 1/2 cup (tea) olive oil
  • 2 large onions cut into rings
  • 3 cups parboiled rice
  • Salt to taste

Preparation method:

  1. In a pan, over high heat, cook the lentils in water until they are slightly soft.
  2. Drain and reserve.
  3. Heat another pan over high heat, add the oil, add the onion and sauté until golden brown.
  4. Remove the onion with a slotted spoon and set aside.
  5. Place the lentils and rice in the pan with the oil, season with salt, cover with water and leave to cook for 25 minutes, or until the rice is tender.
  6. Remove from the heat, transfer to a serving plate, distribute the reserved onion on top and serve.
