- 2 tablespoons of sugar
- 1 tablespoon sweet paprika
- 1 teaspoon garlic powder
- 1 teaspoon cumin powder
- 1 teaspoon nutmeg
- 1 teaspoon of chilli
- Pork intestines
Preparation method
In a container, place the pork and bacon and mix. Add salt, sugar, paprika, cumin, nutmeg and chili pepper and stir to combine. Cover with cling film and refrigerate for 1 hour. Meanwhile, under running water, wash the pork intestines and place them in a container. Cover with water and let sit for 30 minutes.
Then drain the water, tie one end of the casing and stuff it with the pork, without filling it too much to avoid it bursting. Finish by tying the other part of the casing and placing the sausages in a pan with water. Place over medium heat to cook for 15 minutes, after boiling. Turn off the heat, remove the sausages from the pan, drain them and place them on a grill over medium heat to brown. Serve immediately.
Fish sandwich (fischbrötchen)
ingredients
- 2 eggs
- 1 cucumber peeled and chopped
- 1/2 apple, cut and seeded
- 1 tablespoon mayonnaise
- 100 g of Yogurt
- 1 lemon juice
- 2 tablespoons of milk
- 40 g of wheat flour
- 40 g of grated French bread
- 2 cod fillets
- 4 tablespoons butter
- 2 lettuce leaves
- 1 x Hamburger Bun
- Salt, ground black pepper and chopped parsley to taste

Preparation method
In a pan, place 1 egg, cover with water and place over medium heat to cook for 10 minutes. Then drain the water, rinse the egg in cold water, peel it and set it aside. Place the mayonnaise, yogurt, salt, black pepper, lemon juice and parsley in a container and mix. Add the apple and cucumber and stir to combine. Reserve.
In another container, break the other egg and add the milk, salt and mix. Separately, add the breadcrumbs and grated French bread. Next, dip the fish fillets in the wheat flour, then in the egg mixture and finally in the grated French bread. Reserve. In a pan, add the butter and place over medium heat to heat. Arrange the fish and fry on each side for 5 minutes. Reserve.
Assembly
Cut the hamburger bun in half and, in one of the slices, arrange the lettuce and the fish fillet. Cut the boiled egg into slices and add it to the sandwich. Spread a little sauce, cover with another slice of bread and serve immediately.
Meatballs (Königsberger Klopse)
ingredients
- 1 French bread moistened in milk
- 300g minced pork
- 200 g of minced meat
- 1 egg
- 60 g of chopped anchovy fillet
- 1 onion peeled and chopped
- 1 l of broth meat
- 50 g of butter
- 60 g of wheat flour
- 3 tablespoons white horseradish
- 80 g of capers
- 125 ml of fresh cream
- 2 tablespoons lemon juice
- Salt and ground black pepper to taste
Preparation method
Place the bread in a container and break it into pieces. Add the meats and mix. Add the egg, anchovy fillets, onion, salt and black pepper and stir to combine. Then take some dough and shape it into a ball. Repeat the operation with all the dough and set aside. Add the vegetable broth to a pan and bring to the boil over medium heat. Lower the heat, add the meatballs and cook for 10 minutes. Then remove the meatballs from the pan and sift the broth. Reserve.
In another pan, add the butter and wheat flour and stir to combine. Add the vegetable broth, stir and heat over medium heat. Add the horseradish, capers and cream and mix. Add the meatballs to the mixture and cook for 5 minutes. Season with salt, black pepper and lemon juice. Turn off the heat and serve immediately.

sauerkraut
ingredients
- Sheets of 1 white cabbage sanitized
- 2 carrots, peeled and grated
- 2 teacups of water
- Salt to taste
Preparation method
Using a knife, cut the cabbage into thin pieces and place in a container. Add the salt, wait for the vegetable water to come out and drain it. Then transfer to an airtight container, add the carrot, top up with water, cover and store at room temperature for 5 days to ferment. Serve immediately.

- 1/2 vanilla pod
- 75 g of corn starch
- 100 g of blackberries
- 250 g cherries, cut in half and seeded

Preparation method
In a pan, add the sugar and heat over medium heat to caramelize. Turn off the heat, add the juice and wine and mix. Add the vanilla pod and heat again over medium heat until boiling. Add the cornstarch and cook until it thickens. Finally add the fruit and stir to combine. Turn off the heat, wait for it to cool and serve with vanilla ice cream.
