One of the most loved and anticipated foods of the June holidays, pine nuts are seeds that are usually eaten fresh after being cooked or toasted. Despite the tradition, it is also possible to use it as the protagonist of recipes such as pine nut cakeFor example.

Prepared by the nutritionist Arlete Zbonikof Lapinha Spa, this option offers food in a totally different way, but without neglecting its nutritional quality.

Below you can see how to prepare this healthy cake, made with rice flour and filled with pine nuts.

Healthy pine nut cake

Preparation time: 1h30 | Yield: 16 portions of 80g each

ingredients

Pasta

  • 2 cups (tea) rice flour
  • 3 tablespoons of olive oil
  • 1/2 teaspoon xanthan gum
  • 2 whole eggs
  • 1 teaspoon of salt

Filling

  • 3 crushed garlic cloves
  • 1 grated onion
  • ½ cup (tea) olive oil
  • 3 pieces chopped seedless tomatoes
  • 2 teaspoons sea salt
  • 300 g of cooked and ground pine nuts
  • ½ cup parsley
  • 120 g of grated parmesan
  • ½ cup green olives
  • 1 tablespoon thyme
  • 600 ml of tomato sauce
  • 120 g of grated mozzarella
  • 3 separated eggs (yolk in the dough and egg whites in the filling)

Preparation method

Mix the egg yolk with the olive oil and then the rice flour and salt. Work the dough with your fingertips until it falls apart. Outline the bottom of a round shape. Cook for 15 minutes in a preheated oven at 180°C. Reserve. For the filling, sauté the onion and garlic in a pan until golden. Then add the cherry tomatoes cut into pieces and the tomato sauce and boil until a sauce forms. Then add the grated pine nuts, thyme, salt and mix well, finally add the parsley and grated mozzarella. Arrange the filling on the pasta, top with the parmesan and garnish with the olives and bake in the oven at 200°C for about 5 minutes.
