Ingredients for the traditional white bean tripe
- 1.5 kg of tripe in strips
- 1/2 cup (tea) of lemon juice
- 2 tablespoons of oil
- 1 large onion, chopped
- 2 minced garlic cloves
- 1 sliced Calabrian sausage
- 500 g of white beans soaked for 8 hours
- 1 teaspoon of paprika
- 2 chopped tomatoes
- Salt, pepper and chopped parsley to taste
- 1 bay leaf
Method of preparation
Eliminate belly fat and wash well. Put in a bowl, cover with water and lemon juice Leave to rest for 20 minutes. Put in a pot with boiling water and cook for 5 minutes. Repeat the process 2 more times and drain. Heat the oil in a large skillet over medium heat and sauté the onion and garlic for 5 minutes. Add the peppers, tripe, beans, paprika, tomato, salt, pepper and bay leaf and pour in the water to cover. Cook for 1 hour over low heat with the lid on or until soft. Add just enough water as it dries, but you should get a thick broth. Sprinkle with parsley and serve with white rice.
