Chicken with spinach cream

Time: 40 minutes

Ingredients:

  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1kg diced chicken breast
  • Salt and black pepper to taste
  • 2 cloves garlic, minced
  • 1 chopped onion
  • 1/2 cup chopped green chili pepper
  • 100 g grated parmesan for sprinkling

Spinach Cream:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 bunch spinach, cooked and chopped
  • 1 cup of milk (tea)
  • 1 tablespoon cornstarch
  • 1 jar of cream cheese (200 g)
  • Salt and nutmeg to taste

Preparation method:

  1. For the spinach cream, heat a pan with the butter and brown the garlic and spinach for 2 minutes.
  2. Add the milk with the dissolved corn starch and cook until it thickens.
  3. Add the ricotta, season with salt and nutmeg and cook for another 2 minutes. Turn off and set aside.
  4. Heat a pan with butter and olive oil and fry the chicken seasoned with salt and pepper, garlic and onion until golden brown.
  5. Turn off and mix with the green perfume.
  6. Transfer to a refractory plate and cover with the spinach cream.
  7. Sprinkle with parmesan cheese and bake in a preheated medium oven for 10 minutes or until golden brown.
  8. Serve immediately.
