Potato Gnocchi with Pepper Sauce: Perfect for a Family Lunch

Potato gnocchi with pepper sauce

Time: half past one

Performance: 8 servings

Difficulty: easy

Ingredients:

  • 1kg of potatoes
  • Salt to taste
  • 4 tablespoons butter
  • 1/2 cup cornstarch
  • 2 tablespoons of wheat flour
  • Margarine for greasing
  • 100 g grated parmesan cheese

Sauce:

  • 2 tablespoons oil
  • 3 slices of Calabrian sausage, sliced
  • 1 chopped onion
  • 3 chopped tomatoes
  • 1 cube of meat broth
  • 2 jars of tomato sauce
  • Salt to taste

Preparation method:

  1. For the sauce, put the oil in a pan and fry the peppers for 3 minutes over medium heat.
  2. Add the onion, tomato, beef broth and sauté for 5 minutes, stirring.
  3. Add the sauce and cook over low heat for 10 minutes, stirring a few times.
  4. Add salt, turn off and set aside.
  5. Meanwhile, cook the potatoes in salted water until soft.
  6. Drain them and pass them through the juicer while still hot.
  7. Over medium heat, melt the butter in a pan, add the potatoes, cornstarch, wheat flour and mix well until it thickens and no longer sticks to the bottom of the pan.
  8. Pour onto a greased surface and then leave to cool.
  9. Form ribbons with the dough and cut them every 2 centimetres, forming gnocchi.
  10. Cook them in boiling salted water, a few at a time, until they rise to the surface.
  11. Drain them with a slotted spoon and place them in a large baking dish.
  12. Cover with the sauce and mix.
  13. Sprinkle with parmesan and serve immediately, garnishing with basil if desired.
