Chickpea Hummus with Beetroot

ingredients

  • 320 g of chickpea cooked and shelled
  • 1/2 beetroot, peeled and cooked
  • 2 tablespoons tahini
  • 4 tablespoons olive oil
  • 1 lemon juice
  • 1 clove of garlic, peeled
  • Salt and ground black pepper to taste

Preparation method

Place all ingredients except olive oil in a blender and blend until smooth. Gradually add olive oil and pulse to combine. Transfer to a container and serve immediately.

Tip: serve garnished with chickpeas and chopped coriander.

Beetroot stuffed with ricotta

ingredients

  • 4 cooked beets
  • 1/2 cup water
  • 1 cup of tea ricotta crumpled
  • 2 tablespoons peeled and grated carrot
  • 1 teaspoon chopped parsley
  • Salt and olive oil to taste

Preparation method

Using a knife, peel the beets, cut off the tops and remove some of the pulp. Reserve. Place the beet pulp and water in a blender and blend until smooth. Transfer to a pan, add salt and oil and cook over medium heat until thick. Turn off the heat and set aside. Place the ricotta, carrot and parsley in a bowl and mix. Then fill the beets with the ricotta and serve with the sauce.

Beetroot Rice Cake

  • 1 beetroot, peeled and grated
  • 1 cup cooked brown rice
  • 1/4 cup peeled and chopped red onion
  • 1 egg
  • 1/4 cup flour rice
  • 1 tablespoon of water
  • Olive oil, salt and ground black pepper

Preparation method

In a container, put all the ingredients except the egg and water and mix until you get a smooth dough. Add the egg and water and mix until you get a smooth consistency. With the help of your hands, form balls with the dough and grease them with olive oil. Put in the fryer and cook until golden brown.

  • 1 beetroot, peeled and cooked
  • 1 egg
  • 1/2 cup oatmeal
  • 1 teaspoon baking powder
  • 1 cup ricotta puree

Preparation method

ingredients

  • 1 1/2 cups peeled and chopped beets
  • 1/2 cup oatmeal
  • 1 1/2 cups cooked quinoa
  • 2 tablespoons tahini
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon sesame seeds
  • 2 tablespoons of flax seed
  • 1 tablespoon garlic powder
  • 430g cooked white beans
  • 2 beaten eggs
  • Salt, black pepper and olive oil to taste

Preparation method

Place the beets on a baking tray, drizzle with olive oil and bake in a preheated oven at 220 ºC until soft. Remove from the oven, let cool and grate. Place all the ingredients, including the beetroot, in a food processor and blend for 7 minutes. Transfer to a container, cover with cling film and leave to rest for 15 minutes.

Then, with the help of a spoon, take a little dough and shape it into a hamburger. Repeat with all the dough and set aside. Grease a baking sheet with olive oil and place the hamburgers on it. Bake in a preheated oven at medium temperature until golden brown. Serve immediately.
