Ingredients:

  • 2 1/2 cups milk
  • 2 cups (tea) of wheat flour
  • 2 tablespoons butter
  • 2 sachets of chicken broth powder
  • Cold milk for breading
  • Breadcrumbs for coating
  • Oil for frying

Filling

  • 2 tablespoons butter
  • 2 cloves of garlic
  • 1 chopped seedless tomato
  • 3 cups cooked and chopped chicken breast
  • Salt, black pepper and chopped parsley
  • 1/2 cup (tea) of cream cheese such as Catupiry®

Preparation method:

  1. For the filling, in a pan, over medium heat, melt the butter and sauté the onion and garlic for 3 minutes.
  2. Add the tomato, chicken and sauté for 3 minutes.
  3. Season with salt, pepper and parsley.
  4. Mix the curd and let it cool.
  5. To make the dough, blend the milk, flour, butter and chicken broth in a blender until smooth.
  6. Transfer to a skillet and heat over medium heat, stirring until a smooth mass forms and no longer sticks to the bottom of the pan.
  7. Place on a stone to cool.
  8. Take small portions of dough and add a little of the filling.
  9. Shape the coxinha, pass it through the milk, the breadcrumbs and fry it in boiling oil.
  10. Drain them on absorbent paper and serve immediately, garnishing with parsley if desired.
