When ordering ribs from the butcher, the advice is to always opt for the front rib, which has more meat. Oh, and pay attention to the different rib cuts, such as the roast (a horizontal cut of the rib), the plantain (the meat between the bones), the short rib (part rib, part chuck), among others.

“For me, the front rib is the best part of the rib, because it’s where we have the most meat and a more balanced level of fat,” reveals the chef and consultant.

What are the best ways to prepare ribs?

The expert emphasizes that she loves to prepare ribs in different ways. “I cook it on the stove, I seal it on the grill, I wrap it and put it in the oven, I slow cook it in a pan, among other things,” and jokes: “There are so many forms a book on ribs could take.”

If you prepare it on a low flame, use only salt when cutting and serving. When you put it in the oven add salt and black pepper, nothing else. If you cook it in a pan, a mirepoix (chopped carrot, onion and celery) is good to prepare a nice sauce.
