Easy Vegetable Spaghetti Soup

Ingredients:
- 3 tablespoons olive oil
- 1 chopped onion
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 carrots sliced
- 2 diced potatoes
- 200g chopped green beans
- 1 ear of green corn, sliced
- 2 cups cooked, shredded chicken
- 2 liters of water
- 1 vegetable stock cube
- 1/2 pack of shell pasta (250g)
- Salt, black pepper and chopped green chili pepper to taste
- Grated Parmesan cheese for sprinkling
Preparation method:
- Heat a pan with olive oil over medium heat and sauté the onion and garlic for 2 minutes.
- Add the extract, vegetables, chicken, water, vegetable broth and cook for 15 minutes.
- Add the pasta, if necessary, cover with more water, season with salt, pepper, chives and cook until everything has softened.
- Transfer to plates and serve sprinkled with parmesan.
