Easy Vegetable Spaghetti Soup

Time: 35 minutes

Performance: 6 servings

Difficulty: easy

Ingredients:

  • 3 tablespoons olive oil
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 carrots sliced
  • 2 diced potatoes
  • 200g chopped green beans
  • 1 ear of green corn, sliced
  • 2 cups cooked, shredded chicken
  • 2 liters of water
  • 1 vegetable stock cube
  • 1/2 pack of shell pasta (250g)
  • Salt, black pepper and chopped green chili pepper to taste
  • Grated Parmesan cheese for sprinkling

Preparation method:

  1. Heat a pan with olive oil over medium heat and sauté the onion and garlic for 2 minutes.
  2. Add the extract, vegetables, chicken, water, vegetable broth and cook for 15 minutes.
  3. Add the pasta, if necessary, cover with more water, season with salt, pepper, chives and cook until everything has softened.
  4. Transfer to plates and serve sprinkled with parmesan.
