cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Ingredients FOR DECORATING:
– chopped coriander to taste
Ingredients Farofa Bacon and Eggs::
– 1 tablespoon unsalted butter
– 1 tablespoon(s) of olive oil
– 2 tablespoons chopped onion
– 1/4 carrot(s), peeled and grated on the coarse side (optional)
– 50 g of bacon
– 2 units of eggs
– salt to taste
– pepper to taste THE
– 1/2 cup(s) of cassava flour biju
– 1/2 cup(s) extra fine cassava flour (or ready-made cassava flour)
PREPARATION:
- Set aside all the utensils and ingredients for the recipe.
- Chop the bacon into cubes.
- Peel and finely chop the onion.
- Peel and grate the carrot (optional) on the coarse side of the grater.
- Finally, wash and roughly chop the coriander.
PREPARATION:
Farofa with Egg and Bacon:
- Heat a pan over medium heat, add the butter and olive oil and let it melt and stir.
- Add the bacon cubes and fry until lightly golden.
- Then add the grated carrot (optional) and sauté for 1 or 2 minutes.
- Add the chopped onion to the pan and sauté until translucent.
- Make some space in the pan and crack the eggs.
- Let it thicken a little and mix with the spatula, combining them with the other ingredients.
- Season with salt and pepper.
- Once the eggs are cooked, add the biju breadcrumbs and the fine breadcrumbs (or the ready-made cassava farofa), mixing well to incorporate all the ingredients.
- Cook for another 2-3 minutes, stirring constantly so that the farofa is golden brown.
- Adjust the seasoning, salt and pepper.
- Turn off the heat and add the chopped coriander, stirring to distribute evenly.
FINALIZATION AND ASSEMBLY:
- Serve the farofa with bacon and eggs piping hot, accompanying your favorite main course.
- Garnish with a little more cilantro, if desired.
- This farofa is an easy, quick and ideal option to accompany the barbecue.
