Shredded rib skin

Time: 1:30

Performance: 6 servings

Difficulty: easy

Ingredients:

  • 1 kg of ribs in pieces
  • Salt, black pepper and chopped parsley to taste
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 1 ripe tomato cut into pieces

Puree

  • Salt and black pepper to taste
  • 1 cup of milk (tea)
  • 2 tablespoons butter
  • 100 g grated mozzarella

Preparation method:

  1. Season the ribs with salt and pepper, place them in a pressure cooker and cover with water.
  2. Cook for 40 minutes from the start of the pressure.
  3. Turn off and run under water to release pressure. Drain and mince the meat.
  4. Brown the meat in a pan with the garlic and onion until golden.
  5. Add the tomato, parsley, salt and pepper and transfer to a medium serving dish.
  6. To make the puree, cook the cassava in boiling salted water for 25 minutes or until softened.
  7. Drain them and pass them through the juicer while still hot.
  8. Heat the milk with the butter and add it to the puree, mixing with a wooden spoon.
  9. Season with salt and pepper and spread over the stew.
  10. Sprinkle with cheese and bake in a high, preheated oven for 15 minutes. Serve immediately.
