TOOLS

1 bowl(s), 1 mandolin (optional), 1 cutting board(s), 1 strainer(s)

EQUIPMENT

conventional + food processor with slicing blade (optional)

METERS

cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients for onion salad:

– 1 large onion, sliced

– 1 teaspoon(s) of sugar

– cold water to taste – enough to cover the onion(s)

– 3 tablespoons of extra virgin olive oil

– 1 tablespoon(s) of vinegar of your choice THE

– salt to taste

Ingredients to finish

– chopped parsley to taste

PREPARATION:

  1. Separate all the ingredients and necessary utensils.
  2. Soak the onion (according to the preparation instructions).
  3. Wash and dry the parsley, chop it finely and set it aside on absorbent paper.

PREPARATION:

Onion – Soaking (do this step during pre-preparation):

  1. Peel the onion(s) and slice thinly. Use a mandolin or, for convenience, a food processor with a slicing blade to ensure even slices.
  2. Place the onion slices in a bowl, cover with ice water and add the sugar.
  3. Cover the bowl with cling film and leave in the fridge for 20-30 minutes, until the acidity of the onion(s) decreases, without losing its crunchiness.
  4. Back to pre-preparation – point 3.

BBQ Onion Salad:

  1. Using a colander, drain the onion(s) well, shaking to remove excess water.
  2. While the onions are draining, in another bowl, prepare the dressing.
  3. Combine the vinegar and salt, mix until completely dissolved and then add the extra virgin olive oil, beating with a fork to emulsify.
  4. Return the drained onion(s) to the bowl and pour the prepared sauce over them. Mix well.
  5. If you don’t plan on serving it right away, keep the salad in the refrigerator, but avoid preparing it too far in advance to preserve the crunchiness of the onion(s).

FINALIZATION AND ASSEMBLY:

  1. When serving, add the chopped parsley and mix.
  2. Serve to onion salad as a perfect accompaniment to your barbecue.
