A 2-ingredient mashed potato with seasonings, made with water, without milk and lactose, smooth, creamy and easy to prepare

Ingredients Dairy/lactose free mashed potatoes:
– 1 kg potatoes, peeled and cut into 1 finger thick slices
– 1 1/2 cups of potato cooking water or enough
– 2 tablespoons of olive oil
– salt to taste
– pepper to taste THE
– nutmeg to taste, grated (optional) THE
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Start by cooking the potatoes (see preparation).
PREPARATION:
Potatoes – Cooking:
- Wash and peel the potatoes and cut them into thick slices, about 1 finger thick.
- Place it in a pan, cover it with water and season with salt.
- Place over high heat and when it boils, lower the heat to medium and cook for about 20 minutes or until very soft.
- Drain them and keep the cooking water aside for the puree.
Lactose-free mashed potatoes:
- While still hot, pass the potatoes through a potato ricer for a more rustic puree or through a sieve for a creamier consistency, directly into the pan.
- Add the olive oil and mix well.
- Measure the reserved cooking water (see ingredients) and add half of it to the puree, mixing well.
- Salt, pepper and grate nutmeg to taste.
- Return the pan to the heat and gradually add the remaining cooking water, until the desired consistency is reached. Add more water if necessary.
- Cook, stirring constantly, until the puree is glossy and comes away from the bottom of the pan.
- Check the seasoning and adjust if necessary.
FINALIZATION AND ASSEMBLY:
- Place the dairy/lactose free mashed potatoes on a serving dish or distribute directly onto plates, to accompany the main course.
