Paraguayan Soup: Authentic Corn Pie, Gluten Free

Savory corn cake, known as Paraguayan soup, is a typical dish from Paraguay. Gluten-free, delicious and easy to prepare, it is prepared with corn flour, onion and cheese

Ingredients Paraguayan Soup – Traditional Corn Pie:

– 1/2 unit of onion (for chopping, see pre-preparation)

– 25 g unsalted butter

– 250 ml of whole milk

– 50 g of corn flour type

– 1/2 teaspoon(s) baking powder (pinch) THE

– salt to taste

– 40 g of semi-mature cheese, grated

– 1 egg unit – egg white(s) and yolk(s) separated

Ingredients FOR OILING

– oil to taste

PREPARATION:

  1. Separate all the utensils and ingredients of the recipe.
  2. For the complete recipe (4 servings), use a 20x10x5 cm rectangular baking pan.
  3. Peel the onion, cut a medium-thick slice for decoration and chop the rest of the onion for the dough.
  4. Grease the pan with corn oil and sprinkle with cornmeal.
  5. Preheat the oven to 180°C.

PREPARATION:

PARAGUAIAN SOUP – Preparation of the dough:

  1. In a pan, add the butter and heat over medium heat until completely melted.
  2. Add the chopped onion and sauté until translucent, about 2 to 3 minutes.
  3. Then add the milk and heat until bubbles start to form around the edges, but do not boil completely.
  4. Gradually add the corn flour, stirring constantly with a wooden spoon or spatula to avoid lumps. Continue stirring until the angu has a thick but still creamy consistency.
  5. Season with salt to taste and remove from heat.
  6. Add the grated cheese to the mixture and mix with a spatula until combined.
  7. Let the dough rest until it is lukewarm.

Clear and mix:

  1. Meanwhile, beat the egg whites in a bowl with a whisk or mixer until stiff peaks form.
  2. When the mixture is lukewarm, add the egg yolk(s) and mix well until smooth.
  3. Then gently incorporate the egg whites, using gentle movements to maintain lightness.
  4. Finally add the baking powder and mix gently until well distributed.

PARAGUAIA SOUP – Assembly:

  1. Place the dough in a rectangular mold previously greased with corn oil and sprinkled with corn flour.
  2. Spread the reserved onion slices evenly over the dough, forming a decorative design on the surface.

PARAGUAIAN SOUP – TASTY CORN CAKE – Baked:

  1. Bake in a preheated oven at 180°C for about 15-20 minutes, or until the dough is firm and the surface is golden.
  2. To check the ideal position, insert a toothpick into the center; it should come out clean.
  3. Remove from the oven and leave to rest for 5 minutes – time to cool slightly – before unmolding.
  4. Once the resting time has elapsed, turn the Paraguayan Soup – Savoury Corn Cake carefully on a plate or tray.

FINALIZATION AND ASSEMBLY:

  1. Serve cut into squares as a main course with a green salad or as a side dish.
  2. It can be stored in the refrigerator in an airtight container for up to 3 days.
