Zucchini Cake with Sour Cream

Ingredients:

  • 5 tablespoons olive oil
  • 4 cups medium diced Italian zucchini
  • 1 tablespoon minced garlic
  • Salt and black pepper to taste
  • 1/2 cup oil (tea).
  • 2 eggs
  • 1 can of cream
  • 1 vegetable stock cube
  • 1 cup and 1/2 cup (tea) wheat flour
  • 1/2 tablespoon baking powder
  • 1 1/2 cups grated parmesan cheese for sprinkling

Preparation method:

  1. In a large skillet over medium heat, heat the olive oil and fry the zucchini until golden brown.
  2. Add the garlic and season with salt and pepper. Book.
  3. In a blender, beat the oil with the eggs, cream and vegetable broth.
  4. Gradually add the flour and finally the yeast.
  5. Place in a 29cm x 17cm baking dish and arrange the courgettes on top.
  6. Sprinkle with parmesan and bake in a preheated medium oven for 30 minutes.
  7. Serve then.
