Zucchini Cake with Sour Cream

Ingredients:
- 5 tablespoons olive oil
- 4 cups medium diced Italian zucchini
- 1 tablespoon minced garlic
- Salt and black pepper to taste
- 1/2 cup oil (tea).
- 2 eggs
- 1 can of cream
- 1 vegetable stock cube
- 1 cup and 1/2 cup (tea) wheat flour
- 1/2 tablespoon baking powder
- 1 1/2 cups grated parmesan cheese for sprinkling
Preparation method:
- In a large skillet over medium heat, heat the olive oil and fry the zucchini until golden brown.
- Add the garlic and season with salt and pepper. Book.
- In a blender, beat the oil with the eggs, cream and vegetable broth.
- Gradually add the flour and finally the yeast.
- Place in a 29cm x 17cm baking dish and arrange the courgettes on top.
