Ingredients WHITE BEAN Pâté
– 1 can(s) of drained canned white beans (1 can = 400 g)
THE
– 1 1/2 tablespoons extra virgin olive oil
– 1 clove(s) of cooked garlic (see preparation)
– 1/2 unit of lemon – zest and juice
– 1 tablespoon coriander – chopped leaves (or parsley)
– 1/4 unit finger-de-moça pepper, seeded, chopped
– 1 tablespoon chopped green onion
– salt to taste
– pepper to taste THE
– cumin to taste (optional) THE
Ingredients TO ACCOMPANY (OPTIONAL):
– mixed vegetables (carrots, celery, fennel, Japanese cucumber) to taste, cut into sticks (optional)
Ingredients TO COMPLETE:
– extra virgin olive oil to taste
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Drain the white beans with a colander, wash them well to eliminate excess acidity from the preserve.
- Wash the garlic, put it in a non-metallic bowl, cover with water and cook in the microwave for about 2 minutes. Note: this process softens the flavor, making it less aggressive for the shortcrust pastry. Once cooked, remove them from the microwave and peel them.
- Wash the coriander or parsley, peel the leaves and chop them.
- Wash the green onion and chop it.
- Wash the pepper, remove the seeds and chop it.
- Wash the lemon, remove the zest from the peel and squeeze the juice. Reserve the zest on a paper towel.
PREPARATION:
White bean pate:
- In a food processor or on a plate with a fork, pulse/mash the white beans with the olive oil, lemon juice and garlic clove until they form a paste.
- Transfer the paste to a bowl and add the chopped chilli and chopped herbs (coriander/parsley and green onion) and mix again.
- Season with salt, pepper and cumin (optional) and mix well.
- Cover the bowl with cling film and refrigerate until ready to serve.
- If you wish to serve with vegetables on sticks, peel/cut them 30 minutes before serving, keeping them covered and in the refrigerator.
FINALIZATION AND ASSEMBLY:
- When ready to serve, add the lemon zest and mix.
- Arrange the white bean pate in a glass or bowl and finish with a drizzle of extra virgin olive oil to liven it up.
- Tip: Serve accompanied by vegetable sticks (carrot, celery, fennel, Japanese cucumber).
