Gratinated Couscous

Time: 1 hour

Ingredients:

  • 5 tablespoons of oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green pepper, diced
  • 1 cup cooked, shredded chicken
  • 1 cup chopped hearts of palm (300 g)
  • 1 can of drained corn
  • 3 ripe seedless tomatoes, chopped
  • 1 1/2 cups hot water
  • Salt, chili pepper and chopped green chili pepper to taste
  • 1/2 cup (tea) corn flour
  • 3 tablespoons of cassava flour
  • 1/2 cup grated mozzarella
  • 4 tablespoons grated parmesan cheese

Preparation method:

  1. Heat a large skillet with oil over medium heat and sauté the onion and garlic for 3 minutes.
  2. Add the pepper, chicken, palm heart, corn, tomato and cook for 5 minutes.
  3. Pour hot water, salt and pepper.
  4. Add the flour, a little at a time, stirring until it thickens.
  5. Add egg, green chillies and mix.
  6. Pour into a large baking dish and level with a spoon.
  7. Sprinkle the cheeses and place them in a high, preheated oven for 10 minutes to brown.
