Ingredients Gluten-free fit mug cake:

– 2 units of eggs

– 6 tablespoons of coconut milk

– 1/2 teaspoon(s) of lemon

– 1 teaspoon coconut oil + a little for greasing (or olive oil)

– 1 teaspoon(s) of vanilla essence

– 2 tablespoons honey + a little for drizzling, if you like

– cinnamon powder to taste (a pinch) THE

– 2 tablespoons gluten-free oat flour

– 2 tablespoons of almond flour

– 1 teaspoon(s) of baking powder THE

PREPARATION:

  1. Separate all the ingredients and make sure to use cups or molds large enough to ensure that the cake does not overflow while rising in the microwave.
  2. Gently brush the cups with coconut oil or olive oil. This will make it easier to unmold the cake later.

PREPARATION:

Fit mug cake – gluten free:

  1. Beat the eggs well for about 2 minutes with a whisk or fork until they become airy.
  2. Mix the liquid ingredients: add the honey, coconut milk, coconut oil or olive oil, vanilla essence and lemon juice to the beaten eggs.
  3. Add the dry ingredients: mix together the gluten-free oat flour, almond flour and cinnamon.
  4. Finally add the yeast, mixing delicately so as not to lose the incorporated air.
  5. Transfer to previously greased cups or molds: the cupcake batter should not fill more than â…” of its height.
  6. Microwave on high for 2-3 minutes. Check at 2 minutes; if the center is still raw, increase the time every 30 seconds until the toothpick comes out clean. Tip: If your microwave is very powerful, set the power to 80-90% to prevent the cake from becoming dry at the edges and raw in the center.

FINALIZATION AND ASSEMBLY:

  1. Carefully remove the cups from the microwave. Wait for them to cool.
  2. Consume directly in the cups or turn out onto a plate or individual plates.
  3. Drizzle with honey and serve with fruit of your choice (optional).
