Liver pastry

Ingredients:

  • 15 g of fresh organic yeast
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • 1 tablespoon of oil
  • 1 cup (tea) warm water
  • 2 1/2 cups (tea) wheat flour
  • Greasing oil
  • 1 egg yolk for brushing

Filling

  • 1/2 cup (tea) olive oil
  • 1/2 cup pickled mushrooms
  • 1 onion chopped
  • 1 crushed garlic clove
  • 250 g of chicken liver
  • 1 tablespoon chopped parsley
  • Salt and black pepper to taste
  • 1 chopped hard boiled egg

Preparation method:

  1. Dissolve the yeast in the sugar, salt, oil and mix well.
  2. Add the wheat flour and knead until it no longer sticks to your hands.
  3. Let rise for 30 minutes or until it has doubled in volume.
  4. For the filling, place the olive oil, mushrooms, onion, garlic in a pan over medium heat and fry until golden brown.
  5. Remove from pan and set aside.
  6. In the same pan, add the liver and brown for 10 minutes.
  7. Remove from the heat and chop.
  8. Mix with the reserved stew and add the parsley, salt, pepper and egg.
  9. Divide the dough into 20 portions and roll it out with a rolling pin.
  10. Form circles, add the filling, fold in half and seal by pressing the edges with a fork.
  11. Place on an oiled baking tray.
  12. Cover with a cloth and let rise for 30 minutes or until it has doubled in volume.
  13. Brush with egg yolk and bake in a preheated medium oven for 20 minutes.
