Coconut milk brigadeiro ingredients:

– 200 ml of coconut milk (with at least 18 g of fat per 100 g of product)

– 1/2 cup(s) brown sugar (or coconut sugar)

– 4 tablespoons of cocoa powder ABC

– 4 tablespoons cornstarch (dissolved in cold coconut milk or water)

– 1 tablespoon(s) of vegan butter

PREPARATION:

  1. Separate all ingredients and utensils. This recipe yields 8 15g brigadeiros per 2 servings.
  2. Make sure you use high-fat coconut milk. Brands such as Copra (20%) and Ducoco (17%) are suitable, as is the tetrapak version of Sococo.
  3. Sift the brown or coconut sugar directly into the pan and the cocoa into a separate bowl.

PREPARATION:

Pasta – Brigadeiro with coconut milk:

  1. Add the coconut milk to the pan, along with the sifted brown sugar.
  2. Cook over medium-low heat, stirring occasionally, for about 10 minutes, until the mixture thickens.
  3. Lower the heat and add the sifted cocoa. Mix until completely absorbed.
  4. Add the dissolved corn starch and mix vigorously until you obtain a homogeneous mixture.
  5. Cook over low heat, stirring constantly, for another 2 or 3 minutes.
  6. Add the vegan butter and stir, cooking for another 1 minute.
  7. The kneading point is reached when the mixture completely comes out of the pan.
  8. Turn off the fire.

Cooling (time in refrigerator):

  1. Place the mixture on a plate, cover with cling film and refrigerate for 2 hours or until firm.

Preparation (lamination and finishing):

  1. While the mixture cools, chop the chocolate into small pieces.
  2. Using a measuring cup (or a dessert spoon), take 15 g of dough and shape it with your hands, forming small balls.
  3. Arrange the vegan chocolate sprinkles on a plate and roll the brigadeiro balls until they are completely covered.

FINALIZATION AND ASSEMBLY:

  1. Serve Brigadeiro with coconut milk in candy molds
