Passion fruit cupcake

Ingredients:

  • 3 eggs (whites and yolks separated)
  • 2 cups sugar (tea)
  • 1 cup of oil (tea).
  • 1 cup passion fruit juice concentrate
  • 2 1/2 cups (tea) wheat flour
  • 1 tablespoon of chemical yeast
  • Passion fruit pulp to decorate

Filling and covering

  • 2 1/2 (tea) cups chopped milk chocolate
  • 1 cup cream (tea).
  • 1 egg white

Preparation method:

  1. Using a mixer, beat the egg whites and set aside.
  2. In another bowl, still using the mixer, combine the egg yolks, sugar and oil and beat for 3 minutes.
  3. Add the passion fruit juice mixed with the flour and finally the yeast and beat for another 2 minutes.
  4. Add the egg whites and mix gently with a spoon.
  5. Pour into cupcake molds lined with paper liners and arrange next to each other in a large baking tray.
  6. Bake in a preheated medium oven for 25 minutes or until lightly browned.
  7. Remove and let cool.
  8. For the filling, melt the chocolate in a bain-marie, mix it delicately with the cream and egg whites.
  9. Store in the refrigerator for 30 minutes.
  10. Remove from the oven and place in a piping bag fitted with a nozzle.
  11. Press the piping bag into the center of each cupcake to fill and cover the surface with decorations.
  12. Decorate with the passion fruit pulp and keep in the fridge until ready to serve.
