Sweet and sour chicken with soy sauce
Ingredients
Chicken
- 500 g of breast chicken cut into cubes
- Salt and ground black pepper to taste
- 3 tablespoons of olive oil
- 1 yellow pepper cut into pieces
- 1 red pepper cut into pieces
Sauce
- 1/2 onion peeled and chopped
- 50 ml of white vinegar
- 30 ml of soy sauce
- 30 g of sugar
- 50 ml of tomato sauce
- 150 ml of water
- 2 teaspoons cornstarch
- 2 tablespoons of olive oil
- 1 tablespoon sesame
- 1 tablespoon chopped chives
Preparation method
Chicken
In a container, place the chicken, salt and black pepper and mix well. Let it rest for 15 minutes. Next, put the oil in a pan and place it over medium heat to heat it. Add the chicken and brown until golden brown. Add the peppers and sauté for another 2 minutes. Remove from heat and set aside.
Sauce
In a pan, add the olive oil and place over medium heat to heat. Add the onion and brown it. Add vinegar, soy sauce, sugar, the sauce of tomato, water and cornstarch and mix until the sauce thickens. Then turn off the heat, wait for it to cool and transfer the mixture to a blender. Blend for 4 minutes and return the sauce to the pan. Add the reserved chicken and cook over low heat for 10 minutes. Remove from heat and garnish with sesame seeds and chives. Serve then.

Moroccan couscous with apricot
Ingredients
- 250 g of Moroccan couscous
- 500 ml of hot water
- 1 tablespoon butter
- 2 tablespoons of olive oil
- 1 onion peeled and chopped
- 2 cloves of garlic, peeled and chopped
- 100 g of shelled, sliced and toasted almonds
- 4 tablespoons of raisins
- 4 tablespoons chopped apricots
- 2 tablespoons chopped parsley
- Salt and ground black pepper to taste
Preparation method
Place the water, couscous and butter in a container and mix. Let it rest for 5 minutes. Meanwhile, in a pan, add the olive oil and heat over medium heat. Add the onion and garlic and brown them. Add the almondsapricot and raisins and brown for 5 minutes. Add the couscous and mix well. Season with salt and black pepper and sprinkle with parsley. Serve then.

Salmon carpaccio with passion fruit sauce
Ingredients
- 200 g salmon fillet, cut into very thin slices
- Juice with the pulp of 4 passion fruits
- Juice of 1 orange
- 1 tablespoon of sugar
- Salt and black pepper to taste
Preparation method

- 2 cups of rice tea
- 3 cups hot chicken broth

Ingredients
Tofu
- 400 g firm tofu, cut into cubes
- 2 tablespoons of olive oil
- 2 tablespoons sesame seeds
- 2 cloves garlic, minced
- 1 red pepper cut into cubes
- 1 sweet potato, peeled and cut into thin slices
- 2 tablespoons chopped green onion
- 1 tablespoon cornstarch
- 2 tablespoons of water
Sweet and sour sauce
- 4 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon tomato sauce
- 1 cup of water
Preparation method

In a bowl, mix soy sauce, rice vinegar, honey, water and tomato sauce. Book.
Tofu
In a pan add half the oil and heat. Add the cubes tofu and fry until golden brown on all sides. Remove the tofu from the pan and set aside. In the same pan add the remaining olive oil and minced garlic. Sauté for 1 minute. Add the peppers and sweet potatoes and sauté until soft.
In a bowl, mix the cornstarch with the water until you obtain a smooth liquid. Add it to the pan and stir until the sauce thickens. Add the reserved soy sauce, stir and cook for another 1 minute. Add the tofu, sesame seeds and chives. Gently stir to coat all ingredients with the sauce and cook for another 1 minute. Turn off the heat and serve immediately.
