A no-knead pizza, with slices of courgettes, and no less tasty for this

Ingredients for the Mini Zucchini Pizza:

– 1 unit of courgette, cut into medium slices (5 slices per person)

– olive oil to taste

– salt to taste

– 1/2 cup(s) of grated mozzarella

– grated parmesan to taste

Ingredients Seasoned Tomatoes

– 3 tablespoons of diced peeled tomatoes

– 1 teaspoon of dried oregano THE

– 1 teaspoon(s) of olive oil

– salt to taste

– pepper to taste THE

Finishing ingredients

– basil to taste (leaves)

PREPARATION:

  1. Preheat the oven to maximum temperature.
  2. Wash and dry the courgettes, remove the ends and cut them, without peeling them, into slices just under 1 cm thick. Cut 5 slices per person.
  3. Season the sliced ​​courgettes with salt and a drizzle of oil (see preparation).
  4. Prepare the seasoned tomato (see preparation).
  5. Grate the mozzarella and parmesan, if you didn’t buy them grated.

PREPARATION:

Courgettes (do this step before continuing the preparation):

  1. Heat one or more non-stick pans and grease them with olive oil.
  2. Place the courgette slices in the pan, one next to the other, without crowding them, and brown them lightly on both sides: do not let them darken because they will go into the oven anyway.
  3. While the courgettes are browning, start preparing the seasoned tomato, but don’t forget to remove the courgettes when they are golden.

Seasoned Tomato (do this step before continuing the pre-preparation):

  1. In a bowl, mash the peeled tomato, preferably with a food mill, until you obtain a not very smooth puree.
  2. Add the olive oil and oregano and mix well.
  3. Season with salt and pepper.
  4. Continue pre-preparation.

Mini Zucchini Pizza:

  1. Grease a non-stick baking tray with a drizzle of oil and arrange the courgette slices on it.
  2. Distribute the seasoned tomato over the slices.
  3. Spread the mozzarella over the top.
  4. Sprinkle with parmesan.
  5. Place in the preheated oven to melt the mozzarella.

FINALIZATION AND ASSEMBLY:

  1. Remove the mini courgette pizzas from the oven.
  2. Arrange them on a serving plate or, if you prefer, distribute them among the plates.
  3. Decorate with basil leaves.
  4. Serve immediately.
