Ingredients AVEIOCA – OAT CREPIOCA

– 2 eggs, large

– 4 tablespoons gluten-free oatmeal (or gluten-free oat bran)

– salt to taste – pinch

Ingredients FOR GREATING:

– olive oil to taste (or unflavored coconut oil)

PREPARATION:

  1. Separate all ingredients and utensils. Recipe yields 2 birds per 2 servings (1 bird per person).
  2. For a softer texture: use oat flour or, if you prefer, process oat bran into a finer dough.

OATS, OAT CREPIOCA:

  1. Crack the eggs into a bowl and use a whisk or fork to beat them.
  2. Then add the gluten-free oat flour, mixing or beating lightly until smooth.
  3. Add a pinch of salt and mix again.
  4. Heat a nonstick skillet over medium-low heat and lightly grease it with olive oil or coconut oil.
  5. Divide the mixture and add one portion at a time to the pan. Use the back of a spoon or spatula to spread the dough into a thin, even disk.
  6. Keep the heat medium-low for even cooking.
  7. Cook each disk for 1 to 2 minutes on each side or until lightly browned and releases easily from the pan.
  8. Remove the poultry from the pan and place directly on the plate(s).
  9. Repeat until the dough runs out.

FINALIZATION AND ASSEMBLY:

  1. Add your favorite fillings, like cheese, cottage cheese, or sweet options, like honey and fruit.
  2. If necessary, preheat the filling before placing it on the plate oatmeal.
  3. Fold each oat in half for a firmer filling or roll into a pancake shape.
  4. Serve immediately.
