Perfectly textured wheat- and dairy-free sweet potato bread made in the blender – an easy, healthy recipe




An excellent sweet potato bread, wheat-free and dairy-free, prepared with the blender, very simple and with a perfect consistency, without crumbling.

Recipe for 2 people.

Ingredients FIT SWEET POTATO BREAD – GLUTEN AND LACTOSE FREE

– 3 units of eggs

– 250 g sweet potatoes – use ½ cup (tea) cooked sweet potatoes for every 2 servings

– 1/2 cup(s) of water

– 1 tablespoon(s) of brown sugar

– 2 tablespoons of olive oil + a little to grease the pan

– 1 teaspoon(s) salt – shallow

– 1 cup(s) gluten-free fine rolled oats

– 1/2 cup(s) sweet cassava starch

– 1/2 cup(s) rice flour + a little for sprinkling the pan (or brown rice flour)

– 10 g of dry organic yeast THE

– 1/2 teaspoon(s) of xanthan gum

PREPARATION:

  1. Start by cooking the sweet potatoes because they need to cool (see preparation).
  2. This recipe has a good yield, even for 2 people: you get a medium loaf, just like the one in the photo.
  3. While the potatoes cook and cool, separate the other utensils and recipe ingredients.
  4. Grease the pan with olive oil and sprinkle a thin layer of rice flour.

PREPARATION:

Sweet Potatoes – Cooking:

  1. Wash, peel and cut the sweet potato into thick slices.
  2. Place the sweet potato on a plate and cover with another plate.
  3. Cook in the microwave for about 5 minutes (this time depends on the power of your device and the size of the potatoes) or until very soft – tip: check the cooking every 2 minutes.
  4. Sweet potatoes can also be cooked using the traditional method in a pan with water or steamed.
  5. When it is cooked and soft to the touch of the fork, mash or squeeze it while still hot.
  6. Measure the amount needed for the recipe (½ cup of tea for every 2 servings) and let it cool slightly.
  7. Continue pre-preparation (step 3).

Fit sweet potato bread – gluten-free and lactose-free – dough preparation:

  1. Place the eggs, sweet potato puree, water, sugar, oil and salt in the blender and blend until you obtain a smooth, liquid mixture.
  2. In a bowl, large enough to hold all the bread dough, mix the oats, sweet cassava flour, rice flour, baking powder and xanthan gum.
  3. Next, add the liquid mixture from the blender to the dry ingredients and stir to combine – in this process the xanthan gum will start to act and make the mixture thicker.

Fit sweet potato bread – gluten-free and lactose-free – growth:

  1. Transfer the dough to the greased and dusted pan, cover with a clean cloth and leave to rest until it doubles in volume – advice: place it in the microwave with 1 cup of hot water turned off.
  2. The fermentation process takes about 1 hour or long enough for the bread to double in size.
  3. When there are approximately 15 minutes left before fermentation, preheat the oven to 180ºC.

Fit sweet potato bread – gluten-free and lactose-free – cook:

  1. When the oven is hot and the bread has doubled in volume, bake for about 30 minutes until the bread is cooked to the touch of a fork and the crust is golden.
  2. Remove from the oven, remove from the mold and leave to cool, preferably on a wire rack.

FINALIZATION AND ASSEMBLY:

  1. Wait suitable for sweet potato bread, Gluten and lactose free, cool completely before cutting.
  2. Cut into slices and consume within 3 days, keeping it in the refrigerator for better preservation.
  3. After this period, freeze the slices and remove them to consume by heating them in a pan or in the oven.
