Ingredients for potato rosti in the Airfryer

– 2 pieces of potatoes, large

– 1/2 small onion(s), chopped (sliced) (optional)

– salt to taste

– pepper to taste THE

– 2 tablespoons olive oil + a little for preparing and greasing

– 1/2 cup(s) standard Minas cheese, grated on the coarse side (or mozzarella)

PREPARATION:

  1. Separate the ingredients and utensils for the recipe.
  2. Start by pre-cooking the potatoes (see preparation).
  3. Peel the onion (optional), cut it in half and slice to ensure even thickness, or use a mandolin (optional).
  4. Grate the cheese (standard cheese or mozzarella) on the coarse side of the grater.
  5. Grease an airfryer-sized round pan with olive oil.

PREPARATION:

Potatoes – Pre-cooking:

  1. Wash the potatoes, do not peel them.
  2. Place on microwave plate and cook for 1 minute.
  3. Remove from the microwave, turn the potatoes and cook for another 1 minute.
  4. The potatoes should only be pre-cooked when they are still firm: cooking times depend on the power of your equipment and may vary.
  5. Remove from the oven and let cool a little.
  6. Continue pre-preparation (step 3).

Onion (optional) – Pre-cooking:

  1. Place the onion in a non-metallic bowl, drizzle with olive oil and toss.
  2. Place in the microwave for about 1 1/2 minutes, just to cook lightly.

Potato rosti (Switzerland) in the Airfryer – assembly:

  1. Preheat the Airfryer to 180°C.
  2. On a cutting board, peel and grate the potatoes on the coarse side of the grater.
  3. Place it in a bowl, add the pre-cooked onion slices (optional) and the grated cheese (mine or mozzarella) and mix well.
  4. Season with salt and pepper and mix again.
  5. Transfer half the potatoes to a round baking pan greased with olive oil and flatten them.
  6. Distribute the rest of the potato on top and level it again.
  7. Brush the potato mixture with half the olive oil.

Potato rosti (Switzerland) – prepare in the Airfryer:

  1. Place the pan in the Airfryer basket.
  2. Place the basket in the drawer and insert it into the appliance preheated to 180ºC.
  3. Close the Airfryer drawer and bake for about 15 minutes, the top surface should be golden.
  4. Open the drawer, remove the mold and increase the temperature to 200ºC.
  5. Turn the potato rosti using a plate.
  6. Brush the surface again with the other half of the olive oil.
  7. Cook for another 10 minutes or until the potatoes are cooked and the surface is golden: these times depend on the power of your fryer.
  8. Remove the equipment drawer and turn off the Airfryer.

FINALIZATION AND ASSEMBLY:

  1. Put Potato Rösti (Swiss) prepared in the airfryer on a cutting board and cut to serve.
