Kibe
Ingredients
- 500 g of wheat per kibbeh
- 1 cup textured soy protein granules
- 1 cup of tea of chopped mint
- 100 ml of olive oil
- Juice of 1 lemon
- 1 teaspoon cumin powder
- 1 teaspoon soy sauce
- 1 potato, peeled, boiled and mashed
- 1 onion peeled and grated
- 1 tablespoon chickpea flour
- Salt and ground black pepper to taste
- Hot water
- Greasing oil
Preparation method
In a container, place the kibbeh, soy protein and cumin and mix. Cover with hot water and let sit for an hour. Next, squeeze the mixture onto a cloth and place it in a container. Add remaining ingredients and stir to combine. Then, using a spoon, take some dough and shape it into a kibbeh. Repeat the operation with the rest of the dough and place it in a baking pan greased with olive oil. Place in the preheated oven at medium temperature for 30 minutes. Serve then.
Soy protein soup
Ingredients
- 2 tablespoons of oil
- 1 onion peeled and chopped
- 1 clove of garlic, peeled and crushed
- 1 tomato skinless and chopped
- 6 tablespoons textured soy protein granules
- 1/2 liter of warm water
- Salt and ground black pepper to taste
Preparation method
In a pan, add the oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the tomato and sauté until wilted. Finally, add the warm water, soy protein, salt, black pepper and stir to combine. Cook until it thickens and turn off the heat. Serve then.

- 1/2 red onion peeled and chopped

- 500 ml of vegetable broth
- 180ml tomato sauce
- Salt, ground black pepper, thyme, rosemary, olive oil, parsley and chopped basil to taste

- 3 tablespoons of wheat flour
- 2 tablespoons of breadcrumbs
- 1/2 cup peeled and grated onion
- Salt, ground black pepper and cumin to taste
- Greasing oil
Preparation method
In a container, place soy protein and warm water and hydrate for 20 minutes. Next, drain the water, squeeze the proteins into a cloth and put them back in the container. Add the other ingredients and mix. Then, with the help of a spoon, take some dough and shape it into a hamburger. Repeat the operation with all the dough and place the burgers in a pan greased with olive oil. Bake in a preheated oven at medium temperature until golden brown. Serve then.

- 4 tablespoons of mayonnaise vegan

Preparation method
In a blender, place the soy protein and blend until it turns into powder. Add the other ingredients and beat until it reaches the consistency of a pate. Transfer to a glass container and place in the refrigerator to cool. Serve then.
