Caponata, very easy to prepare and very tasty, is worth a meal and lasts a long time in the refrigerator

Caponata ingredients
– 1 unit of medium aubergines
– 1/2 stalk(s) of celery cut into medium slices
– 1/2 unit of medium diced onion
– 1 leek(s), cut into medium slices
– 1/3 of red pepper, cut into medium cubes
– 1/2 unit of yellow pepper, cut into medium cubes
– 1/4 cup(s) raw cashews (or raw almonds with peel)
– 1/2 whole garlic clove, slightly crushed
– thyme to taste (sprigs)
– fresh rosemary to taste (sprigs)
– 1 unit(s) of laurel
– 1/4 cup(s) assorted raisins (optional) bcd
– 1/2 teaspoon(s) of spicy paprika B.C
– 1/2 cup(s) of olive oil
– salt to taste
– pepper to taste B
Ingredients for the watercress bed
– mini watercress to taste
– extra virgin olive oil to taste
– salt to taste
– pepper to taste B
Ingredients for decorating
– thyme to taste (leaves)
PREPARATION:
1. Preheat the oven to 220°C
2. Separate all the ingredients and utensils for the recipe. This recipe is best if made 1 day in advance.
3. Wash the vegetables and herbs well.
4. Cut the aubergine(s) into slices of approximately 1 cm and then into medium cubes.
5. Cut the leek and celery into medium-sized slices.
6. Chop the onion(s) into medium cubes.
7. Wash the peppers, remove the seeds and white parts, cut them into medium cubes.
8. Wash the aromatic herbs that will go in the pan (thyme and rosemary).
9. Wash and peel the thyme, let it dry on paper towels to finish.
10. Wash the watercress and soak it in a sodium hypochlorite solution while you prepare the recipe.
PREPARATION:
Caponata:
1. In one or more baking trays that can hold all the vegetables, arrange the aubergine(s), onion(s), peppers, garlic, celery and clove(s). ) of crushed garlic(s).
2. Add whole chestnuts or almonds, raisins (optional), aromatic herbs (thyme and rosemary) and bay leaves.
3. Season with salt, pepper, paprika and olive oil and mix well.
4. Place in a preheated oven at 220ºC for about 30 minutes, or until all the vegetables are well roasted.
APPETITE OR DESSERT (optional):
If you choose to prepare an appetizer or dessert, take advantage of the oven time to prepare it.
Caponata:
1. Remove from the oven, transfer to a bowl, discarding the thyme and rosemary sprigs, bay leaves and garlic clove.
2. Place in the refrigerator to cool for 15 minutes.
Watercress bed:
1. Drain and dry (or spin) the mini watercress.
2. In a bowl, season the watercress with salt, pepper and a drizzle of extra virgin olive oil.
FINALIZATION AND ASSEMBLY:
- Prepare a “bed” of watercress on one or more plates.
- Spread on top caponata hot or cold.
- Decorate with thyme leaves.
- Store the caponata in the refrigerator, it will last a maximum of 5 days.
